A lovely super clean coffee. Lighter roasts will show some crisp hints of  citric acidity leaving a sweet edge to the cup. Medium body and pretty chocolaty, one gets a little veggie in the aftertaste at the light roasts, a hint of cucumber. Clean and defined at the lighter roast points is what separates this cup from average and shows how cool a Java coffee can be. Medium roasts lean the cup more towards a straight chocolaty note with just a little hint of lemony goodness upfront, considered low acidity at a medium roast and beyond. The jazzy veggie tone mutes up at a medium roast, which for some is good, others bad. Depends on what you like. Darker roasts push a strong chocolaty factor with some smoky and roasty notes. Like a Sumatra but much cleaner without the earthier factor.

Description

The Frinsa Collective is focused around a family-owned estate known as Frinsa, run by Wildan Mustofa. The “collective” refers to the family’s purchasing of coffee from neighboring producers for processing and sale from the Finsa Estate. The coffee is rinsed, sorted, and depulped the same day it’s delivered, and fermented for 18 hours. It’s washed to remove the mucilage, then dried on patios for 7–10 days.

Roasting Notes: Hard to find a bad roast on these beans but a bit exotic for some at the light roasts. Washed processed so a bit easier to roast than most other Indonesians coffees. We thought the lighter roasts shined more than the darker roasts. Setup time will help smooth out the roasts if you shoot pretty light or pretty dark. Anywhere in between is lovely without much setup.

    I know I’m repeating what I said about one of the other Indonesian varieties, but it bears repeating for this one! In short, whoa this coffee is good! We roasted to a solid medium/full city with the Gene Cafe. (474 degrees, 15 minutes, full cool cycle, YMMV). We keep extensive details about everything we’ve roasted (about 27 varieties to date) and this is one of the best.
