Expensive, but one of a kind coffees that are a tasty treat for any new wave coffee fan. All very small lot production from award winning farms, this is the best of the best for the Panama offerings.

A half pound each of:

Panama Premium Boquete – Casa Ruiz – Berlina Estate – Geisha Natural
Best at a light to medium roast. High acidity and very fruity with a ton of candied lemony floral right upfront. The more citric floral notes quickly fade into a very fruit forward cup of coffee which pulls some balance with hints of jasmine and bergamot, which the Geisha strain is known for. A wonderful example and very easy to tell upon first sip that you have something special. The aromatics will sell the cup as well, not much else like it besides a stellar Ethiopian, but even most of those this season will not compare.

Panama Premium Boquete – Damarli Estate – Noble Geisha “Imperial”
A great light roast bean with some strong and bright fruit forward tones balanced with a bit of spice and stellar aromatics. Its always a bit harder to pick out those traditional Geisha tones with the natural processing but if you stick lighter, you definitely get them in the aromatics, some great almost jasmine like Ethiopian aromatics with this cup. Clean as a whistle with very noticeable lemony/floral acidity accompanied with some lovely red fruit tones. Sweet, delicate and well defined at the lighter roasts. A slight warning though, a fruit forward cup with higher acidity, lighter roasted, is not for everyone.

Panama Premium Boquete – Mama Cata Estate – Geisha ASD “Arenal”
This cup stands out even among a table full of the worlds best coffees. Lighter roasts are where this cup is best served and will be on the brighter side, good clean acidity, very sweet and floral with decent fruit, a bit of jasmine especially in the aromatics with clearly noticeable tea like spice. Those Geisha floral and spice notes popping right out especially at light roast points, a cup you Geisha fans will not want to miss. Careful with these beans, under or over roasting, although still likely to be a tasty cup, will greatly mute the unique attributes this cup can put off. Just a slight touch past first crack is what to shoot for.

Panama Premium Boquete – Mama Cata Estate – Geisha Washed “Tona”
This cup stands out even among a table full of the worlds best coffees. Lighter roasts are where this cup is best served, good clean acidity, very sweet and floral, a bit of jasmine especially in the aromatics with clearly noticeable and very clean stone fruit tones balanced with a bit of tea like spice. Really an amazing soft and refined fruit tone for a washed processed coffee. Wonderful how the cup breaks what most think of washed processed coffees. With those Geisha floral and spice notes popping right out even at light roast points, a cup you Geisha fans will not want to miss. If you are used to washed processed Geisha, keep in mind this coffee tastes almost like a super clean rich honey processed coffee, it is not dark toned and loaded with some bergamot like many washed Geishas.

Panama Premium Boquete – Mama Cata Estate – Caturra ASD “Porton”
A super snazzy coffee! This is best in the light to medium roast level. Punchy acidity with a complex grape skin fruity factor coming from the ASD processing. Full of sweet citric, fruit and floral tones that will catch a little balance with a spiced malty undertone. Hints of red fruit can be found especially as the cup cools. This cup is all about the brighter, fruitier characteristics but you can mute them a little if too punch by taking it to a nice medium roast, builds a little more body and malty-ness.

Panama Premium Boquete – Volcancito Estate – H1 CentroAmericano
Wow, super tasty but you can tell it is something unique. Definitely still a light roast coffee and very high scoring: very floral with higher acidity and a ton of fruitiness. You can see the Ethiopian heritage is how floral this cup gets upfront the addition of all the sweet stone fruit tones combine wonderfully. Where this cup differs from say a Geisha coffee, the darker tones to this cup are almost more Java like, rustic chocolate spice. Mostly at a lighter roast you just get overwhelmed with the fruit and floral but let it cool a bit and you can see the balance with the more rustic chocolate notes, think Ethiopian gr. 3, or Yemen coffee.
