Description
This is a high-grown, washed-process coffee lot sourced from smallholder producers across Chiapas, Mexico, one of the country’s most important coffee-growing regions. Grown in the mountains at 1,100 to 1,800 meters above sea level, these coffees benefit from cool temperatures and slower cherry development, helping create dense beans and a cup that is clean, structured, and nicely balanced. Royal lists this lot as organic, fully washed, and sun dried, making it a great example of the classic, approachable profile that has made Chiapas such a respected coffee origin.
Chiapas also has a strong agricultural story behind it. It is one of Mexico’s leading coffee regions and a major center for organic production. Rainforest Alliance notes that Chiapas accounts for more than 41% of Mexico’s total coffee output, while coffee grown in traditional shade systems can also support biodiversity, soil health, water retention, and long-term environmental balance.
In terms of classification, this lot is offered as SHG EP. SHG stands for Strictly High Grown, a commercial grade used for coffees grown at higher elevations and often associated with better density and a brighter, more defined cup. EP stands for European Preparation, a cleaner export preparation that indicates more careful physical sorting and selection of the green coffee.
Tasting Notes: A pleasant and clean cup that proves delicious across a range of medium to dark roasts. Pleasant notes of red fruits such as black cherry intermingle with nuances of toasted almond, caramel, and dark chocolate. Light roasts may present as slightly brighter with a more prominent fruit character, offering a cleaner structure and an extra touch of acidity. Medium roasts strike the best balance, rounding out the fruit tones while developing greater caramel sweetness and a depth of nutty notes. Darker roasts steer the cup toward deeper notes of dark chocolate and roasted nuts, harmonizing perfectly with its fuller body and smooth finish.
Roasting Notes: An easy to roast coffee that is very forgiving across a wide roasting spectrum. Light roasts will accentuate the fruit notes and acidity, resulting in a cleaner, brighter cup. Medium roasts were our favorite range, as they extract the most pleasing balance between red fruits, caramel sweetness, toasted almond, and chocolate depth. Medium-dark and darker roasts intensify the bittersweet chocolate tones, lending the cup a rounder, more comforting profile while still retaining enough sweetness to maintain balance.
