Description
This coffee is sourced from smallholders in Riripa village in West Arsi, Sidamo. Farmers cultivate coffee at 1,900 to 2,200 meters above sea level. They deliver their coffee to a local washing station owned and operated by SNAP Trading.
Many would say that the strength of Sidamo coffees lie in the regions’ diversity of profiles. The many microclimates and varying soil types lead to striking differences from town to town. But across all Sidamo coffees is a profound complexity that many attribute to the diversity of local landrace varieties. Varieties can differ from town to town and even farm to farm where each farmer may have more than one unique varieties seldom or never found outside their plot. When all these different varieties are blended at the local cooperative, the resulting blend expresses the complexity of the plant genetics in the area.
Similar to a washed Yirgacheffe with but with less spice tones. Oromia produces more neutral chocolate like dark tones compared to the tea like note of Yirgacheffe.
West Arsi is a high-elevation area near the center of Ethiopia experiencing subtropical climates. The washing stations throughout West Arsi service hundreds of smallholder producers. The mixture of dark and red soil creates coffees that are very clean and elegant in profile.
Tasting Notes: A wonderful light to medium roast coffee: a delicate cup with a sweet edge. Very complex with wonderful aromatics, floral with hints of jasmine. Not overly acidic, but will have a bit of citric upfront at lighter roasts comingling with the floral overtones, balancing with just a hint of an herbal/spice/chocolate like darker tone. With a little longer setup, one will see the depth of flavor increase adding a slight fruit tone, more noticeable as the cup cools.
Roasting Notes: Medium chaff and even roasting, keep it in the lighter roast levels to see it shine. If you get it too dark, it will taste neutral (plain). A couple extra day setup really helps smooth out the cup and bring greater depth to the flavors. Watch roast times a bit, on air roasters, good to get a little slower development. Too quick of a roast can turn the cup a bit more herbal.
