A wonderful batch of organic Colombian coffee. Produced by an independent cooperative, with very fresh, clean-tasting beans.
For many years, Tolima has remained hidden among other well-known coffee-growing regions because armed conflict and coca leaf production isolated producers and exposed them to high levels of violence. During this time, the municipality of Planadas, located in the far south of Tolima, has remained an untapped source of specialty coffee, where thousands of producers have grown coffee on just a few hectares of land interspersed with shade trees, plantains, corn, beans, and sugarcane.
As the conflict has calmed in recent years, local associations have taken the initiative to facilitate market access for these producers. This particular plot was grown by members of the Asociación Ecológica Productora de Paz (ASEPROPAZ), located in Planadas. With 130 members, ASEPROPAZ has focused on certification and training producers in good organic practices. The cooperative has also invested in basic infrastructure, such as road improvements and the establishment of a local warehouse.
Producers carefully harvest and sort the cherries before depulping, fermenting, washing, and drying them at their own micro-mills. Individual batches are combined to create a clean and consistent communal blend that reflects the harmony among producers in post-harvest practices, with the complexity reflected in each farm.
Tasting Notes: Excellent flavor in the cup, from light to dark! Smooth, sweet, rich, and buttery. A very chocolatey cup with hints of floral acidity and a soft fruity tone. Overall, lower acidity and fuller body, with some classic Colombian nutty tones in the aftertaste. A little spice in the cup creates a wonderful depth of flavor. At lighter points, you get brighter, crisper tones; small hints of fruit combine with just a hint of a darker note. A balanced cup if given a longer setup, but can be a bit bright if sipped too early. Medium to dark roasts are where you get the most classic Colombian cup, with fuller body and more powerful nutty/chocolate tones; the fruit disappears, but the cup retains a nice, sweet edge.
Roasting Notes: Easy to roast, with less husk and a slightly two-tone roast. We recommend starting with at least a medium roast; it was our favorite roast. Adjust to a lighter or darker shade according to your taste. A slight sheen on the surface indicates a flavorful roast.
