Very clean cup for a Sumatra – it gets really smooth and chocolaty at the right roast (strong medium) even has a sweet edge and minimal earthiness. Darker roasts are more traditional with Indo coffees but it will get much edgier and smokier accentuating the earthy factor. A big strong prime example of a classic Indonesian Sumatra coffee. Very thick, creamy and chocolaty at a strong medium to dark roasts.

Description

Coming from the Jagong Mill and surrounding family-owned farms located in the Takengon and Atu Lintang coffee region of Aceh province on the island of Sumatra, Indonesia.  Irham Junus owns and operates the Jagong Mill with his son, Andi and daughter, Ina. The Junus family has focused on meticulous ripe cherry selection resulting in something truly unique in Sumatra. The Junus family also has full control of the processing and milling right up to the final export stage, avoiding the long and convoluted supply lines that can compromise Sumatran quality.

Tasting Notes:
Clean cup for a Sumatra (Sumatra Wet-hulled coffees are a little bit of a ugly duckling compared to Washed processed coffees from the Americas or Africa). It gets really smooth and chocolaty at the right roast (strong medium) even has a sweet edge and minimal earthiness. Darker roasts are more traditional with Indo coffees but it will get much edgier and smokier accentuating the earthy factor. A big strong prime example of a classic Indonesian Sumatra coffee. Very thick, creamy and chocolaty at a strong medium to dark roasts.

Roasting Notes:
This beans will roast a bit uneven with the traditional Indo processing but all in all, an easy coffee to roast. Avoid light roasts for they will be a bit underdeveloped. Medium roasts are nice and smooth, dark roasts get strong and edgy. Low chaff beans, a longer setup with smooth out the cup very nicely.
