This cup is nice and chocolaty like most of the Honduran coffees, lower acidity and medium bodied. A sweeter edge to it before hitting second crack. Clean, rich and very drinkable. Medium roasts were our favorite but might be a little mild for some.  Shoot for touching second crack if you like a strong cup, it will pick up a little smoky tone into 2nd crack.

Description

New 2019/20 Crop!  A tasty kick-off to the new Central American season.

Well known among chocolatiers for Cacao production, Cooperativa Agrícola Cafetalera San Antonio Limitada (COAGRICSAL), is not one of the coffee cooperatives you may have heard about in Honduras but they are focusing on diversification and now have more than 2000 producers cultivating coffee alongside other crops like cacao and pimienta (black pepper). The co-op consists of 5 regional wet-mills where producers deliver cherry. Each mill is similarly designed so coffee can be processed consistently at each location. Next the coffee is transported to a centralized dry-mill where dried parchment is stored and prepared for export. They keep a fully-staffed cupping lab equipped to cup through every lot and ensure consistent quality. In addition to providing valuable logistical support, they also help farmers with technical support for achieving improved farm management practices and gaining certification. On the social side they also focus on the well-being of their community, which means investing in a host of activities from education, access to health care, and reforestation, among others.

Roasting Notes: Easy to roast. Very light roasts and one can get a little grassy tone. A couple shades past first crack to as dark as you want to go. Medium roasts have nice balance, a little hint of acidity and more nutty/caramel like tones. Past a medium roast, turns into a nice everyday drinker being medium bodied, low acidity and on the chocolaty/nutty side.
