Best served from medium to dark roast. An unique and tasty treat for Indonesian fans. Pushing the roast at least into the medium roast ballpark will provide clear and crisp tones. Thick and creamy coffee, low acidity, semi-sweet chocolate with a bit of spice. A bit neutral tasting at the darker roasts making it a great candidate for espresso, or as a blender component to add thick and robust dark tones. Although the washed processed is way cleaner than any wet-hulled offering, it will still be fairly earthy and vegetal at lighter roast points like most Indonesian coffees.

Description

A wonderful and unique cup of Indonesian coffee. This is a washed processed offering versus their traditional wet-hulled coffee. Far less earthy but still very thick and creamy. Low acidity, thick, semi-sweet and on the nutty/chocolate side of things.

Rancabali is a sub-district in Bandung Regency, West Java, located about 28 km from the regional capital, Soreang.  The area has a cool climate because it is surrounded by mountains, stretches of tea plantations and community coffee farming land. Rancabali is a conservation center for animals, namely deer and Javan Gibbon. 47 small farmers in the region deliver their cherry to our wet mill in Tenjolaya Ciwidey. The coffee is promptly depulped and undergoes a classic washed process. The facilities at the mill enable this processing method, as it is possible to control the drying with greater consistency, a difficult feat for smaller operations due to the humid conditions.

Roasting Notes: Medium to low chaff and fairly even roasting. Darkens up a bit quickly so make sure you see expansion in size to mark first crack. Has some interesting characteristics at lighter roast points some will love, but would need a longer setup time to taste right 5-7 days. Medium to dark roasts were a tasty cup from the get go, everybody like them the next morning.
