A wonderful very clean and fruit forward cup of coffee best server from light to medium roasts. Lighter roasts will have a little lemony acidity but pop the red fruit notes right to the front, hints of a dark tone provide some balance but most would think the cup to be front loaded with floral/fruity tones with a hint of lemon. Medium roasts build a little malty undertone balance the cup better but do mute a little fruitiness and most of the lemony acidity, easier to drink all day but not quite as snazzy. Tasty at a darker roast as well but hides the bulk of the fruity floral tones which define this cup

Description

Laguna de Ayarza (Lake Ayarza) is a crater lake in the Santa Rosa department of Guatemala. It is known locally as Laguna Azul (Blue Lake). Lake Ayarza was formed around 20,000 years ago by a volcanic eruption. The lake has a surface area of 14km² and is located at 1,400masl. According to local legend, the true nature of the lake is far more mysterious. Some say it is connected to ocean, the actual depth is unknown and that an expedition to find the bottom ended in tragic failure.

Lake Ayarza is in a remote location and access is difficult. This means it has remained in pristine condition with only around 10 houses built around its edge. This is a wonderful natural processed offering from small holders around the lake and processed by our expert processing buddies over at Olam coffee, some small holders bring full truckloads of cherries; others arrive with a single sack on the back of a donkey. 

Tasting Notes: A wonderful very clean and fruit forward cup of coffee best server from light to medium roasts. Roasting Notes: A bit higher chaff bean but even roasting for a natural, great prep all in all. Error a little lighter than darker on this bean, just a little development past first crack makes a real tasty treat. A short setup works well with this bean, pops the fruit notes right out but if a little too sharp, set it aside for a couple days before drinking.

    Love Ethiopian naturals and burman coffee never fails to deliver. So when I saw they had this Guatemalan natural I had to try it. I did a city + roast and boom! Tasting notes spot on, its floral, sweet, red fruit with a malty tone. Cup is well balanced and tasty. Finish reminds me of a traditional guat. Toffee, Carmel chocolate. Please keep this one in stock! Don’t sleep on it!!!
