Description
Hondurans coffee really tend to shine with the decafs – smooth, rich and chocolaty while naturally being lower acidity. A bit more neutral and chocolaty but not nearly as nutty as a Brazil or Colombian.
MWP is Mountain Water Processed, a non-solvent based decaf method out of Mexico. A wonderful newer decaffeination plant.
Tasting Notes:
Very clean cup and fuller bodied, smooth and chocolaty with a sweet edge, this is one tasty cup. Very hard to tell its a decaf. The stronger chocolate undertone mixes very well with the floral sweetness on top to create a lovely balance. Lighter roasts show some awesome tea like spice notes and much stronger floral character. Usually water processed decafs do not hold lighter roasting but these beans were tasty light to dark. If you push it a little further, close to into 2nd crack, its much more chocolate bomb coffee.
Roasting Notes:
Fairly easy to roast and best medium to dark – Watch it a little close, darkens quickly. If seeing splotchy parts on a single bean, you are at a lighter roast point. We tended to like it best at a medium roast; sweet, chocolaty, smooth with some soft fruit tones. A little smoother and more delicate – darker gets more chocolaty and stronger, semi-sweet with some smoky accents.
