A very tasty top grade Colombian with a unique processing method.
This traceable community blend with a vibrant regional profile and unique processing character was produced from the efforts of 50 producers committed to following a specific processing protocol (double fermented) to draw-out a pronounced fruit forward cup, much cleaner than natural processing. Using their own micro-mill, each producer carefully harvested cherries, fermented the cherries for 72 hours in sealed bags, then depulped and fermented in tanks for another 48 hours. After this prolonged two-step process of fermenting, the coffee was washed and then gently dried on raised beds.

Tasting Notes: An awesome exotic Colombian, tasty from light to dark. Brighter, sweeter and thinner bodied than you average Colombian. Full of floral, soft fruit and chocolate like tones.
Lighter roasts will have strong citric floral notes with some red fruit highlights. Hints of chocolate herbal spice will pull a little balance between the light and dark tones. Light roasts will pop out the more exotic tones in these beans, they will get more classic Colombian character the darker you roast. Medium roasts are more balanced, reducing the stronger citric component, pronouncing the red fruit and bringing forth a thicker body with more traditional rich nutty & chocolaty Colombian tones. Darker roasts into 2nd crack are a little edgy, semi-sweet chocolate and spice tones will pack a punch, the roasty & smoky tones will compliment the darker tones nicely, a hint of a fruity tone can be found in the aftertaste but just a hint.
Roasting Notes: Easy to roast, beautiful bean screen. Even roasting with medium chaff levels. Light to medium roasts are where this cup will shine, but if you dislike a little acidity then shoot for a medium/dark roast. A little longer setup can help smooth out some of the more acidic cup characteristics.

I’m a sucker for fruit-forward coffees and this hit the spot. I really liked this one around city/city+, especially after it rested for a week or two.
