A truly special Mountain Water Process (MWP) decaf from the COMSA cooperative in Marcala, La Paz, Honduras a 1,500-member Fair Trade and USDA Organic certified group renowned for its community-driven, regenerative approach to coffee farming. Grown between 1,300 and 1,700 masl and gently decaffeinated with nothing but pure glacial water from Pico de Orizaba, this lot delivers a clean, medium-bodied, low-acid cup with layered sweetness: ripe strawberry and cola up front, followed by warm maple syrup, roasted butternut squash, and a soft cocoa finish. Roasts best from City+ through Full City and performs beautifully across drip, pour-over, and espresso a decaf that truly drinks like origin.

New Crop Comsa! This cup is nice and chocolaty, lower acidity and medium bodied. A little sweeter edge to it except for super dark roasts. Besides a chocolaty factor one will get some herbaceous nutty/caramel/floral like tones at the medium to dark roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.

Refisa is a washed Grade 1 coffee from the emerging West Arsi region of Ethiopia, grown by smallholder farmers in the villages of Roricho, Bulga, and Solena at elevations up to 2,070 meters above sea level. Processed at SNAP’s Refisa Washing Station under the direction of Negusse Debela, this lot represents the best of what Nensebo has to offer. A region that, until recently, was sold simply under the broader Sidamo label, now earning its own distinct identity in the specialty coffee world. In the cup, Refisa delivers a clean, bright, and layered experience: floral notes of jasmine and coffee blossom at the forefront, complemented by lemon, mandarin, and peach, with a honey-like sweetness and a soft caramel finish that lingers beautifully.
