A clean and balanced cup, with a medium body, lower acidity and a silky texture. It features a pleasant, smooth, and well-balanced citrus acidity balancing with a nutty/chocolate dark tones with some herbal/spice accents. From medium to dark, the predominant flavor is chocolate, accompanied by sweet caramel/burnt sugar notes and a subtle aroma of roasted nuts (peanut). Light floral notes and subtle herbal/spicy nuances are also present, reminiscent of black tea on a pretty nutty base note. A smooth and sweet coffee, neither acidic nor bitter, with a round and balanced flavor profile, ideal for any brewing method.

Fantastic example of an Ethiopian Natural. Keep this one light to medium roasted. Too dark and the awesome crisp and clean fruit/floral notes disappear. A mellow cup on the sweeter side with nice darker fruit tones popping right out. The cool natural tones balance with a tea like spice note, a sign of its roots, Yirgs are known for their more tea like dark tones. Many would call it a chocolaty undertone with a jazzy spice note but we like the tea reference and most will agree. A bit more delicate of a cup with a little lower acidity. Depending on what you like this can be a real perk, fruity and sweet without risking high acidity or overly sour tones at the lighter roast points. Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.
