A wonderful daily drinker from medium to dark roasts. Hints of semi-sweet winey acidity comingle with a rich malty undertone. Medium bodied with medium to low acidity. In light to medium roast range, the cup is crisp, showcasing a brighter citric note that comingles with a little nuttier darker note. Medium to dark roasts cut out the acidity creating a creamier mouthfeel. A smooth and rich cup. A bit roasty tasting into second crack but does compliment the semi-sweet and complex darker tones.

Best at a medium to dark roast: bigger bodied and darker toned. Clean and delicate cup with subtle floral tones on a cocoa/chocolate base. Gentle sweetness and medium citric acidity reminiscent of mandarin; very balanced profile. In lighter roasts, citrus-floral nuances with a slight herbal/vegetal undertone may emerge. With medium roasts, it becomes rounder with spiced chocolate; in dark roasts, “baker’s chocolate” cocoa predominates, with a heavier body and very low acidity. Medium roasts are where we thought it shined, just a small hint of citric sweetness upfront with a good balance of spicy chocolate notes, unique spice, more like the Indian coffees. Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.

China Premium Yunnan – Torch Coffee – Menglian Red Honey
Clean, sweet and balanced, this is the Yunnan offerings for most coffee fans. Best at the light to medium roast levels: there is a little crisp citric upfront, a bit more lime than lemon, a hint of red fruit giving a sweet edge. These lovely lighter tones pull some balance with a nutty/chocolate like undertone with a bit of spice, accentuated as you push the roast darker. Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.
