Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. A very rich, strong and smooth cup. A cousin to Sumatra or Sulawesi coffee; Blue Moon always is a bit smoother without as much peaty earthiness, or swampy fruit. A sweeter cup for an Indo with malt, chocolate with a little traditional earthy terroir of the wet-hulled Indonesians. Fuller bodied, a little hint of acidity at a medium roast, a definite go to for our strong-medium or dark roasts here at Burman Coffee. Pulls some molasses undertones as ones pushes into second crack roasts. Hints of slight smoky tone at darker roast.

Low acidity, thick and creamy, with small hints of fruit balancing with a strong earthy chocolaty undertone. Quite the tasty treat and surprisingly for an Indonesian, the best roast we found on this one was in the strong medium roast range. Smooth, clean, balanced and exotic: mostly a chocolaty cup with a sweet edge, slight hints of fruit and earth. Lighter roasts show just a hint of citric crispness with a little herbal chocolate contrast, accentuates the fruitiness but it is not over the top, too light can come off a bit grassy, make sure the beans are through first crack to just past. The darker roasts were less sweet and smooth, more potent, rough and tumble, bakers chocolate with roasty accents, not fruity and more similar to a Sumatra.

A wonderful super fresh Sumatra arrival!
A very clean traditional Sumatra cup. Best from medium to dark roasts. Fuller bodied with some nice exotic incense spice notes intermingled with a bakers chocolate and smoky cup profile. Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. Darker roasts were fuller bodied and very smoky with the spice lingering in the aftertaste, very low acidity; good for dark roast fans, espresso or blend bases.Price: $7.99/lb - 6.79/lbPrice: $7.99 -

Best from a medium to dark roast, wet-hulled coffees are not light roast coffees no matter how premium of an offering. Hints of citric crispness and soft fruit with a little sweeter chocolate edge, pulls some balance with some earthy spice (the good kind). Very clean cup for a Sumatra that is drinkable and balanced from a medium roast and beyond. The darker you roast, the fuller the body gets along with reducing any hints of acidity. Into second crack will turn more into a chocolaty spice noted treat but will reduce the sweeter edge. A wonderful light to medium roast coffee. Leans a bit more towards a washed processed coffee than natural. A very clean, sweet and delicate cup with medium to low acidity: chocolate, spice, tea and fruit tones comingle nicely at the different roast levels. Lighter roasts show just a small pinch of citric and fruit comingling with complex tea like undertones, a fuller body and sweeter edge. Medium roasts mute much of the tea like spice turning the cup more chocolaty and semi-sweet, hints of fruit as the cup cools but hardly noticeable while hot. Darker roasts are more of a semi-sweet chocolate bomb, could be a bit much without a splash of milk but works wonderfully for espresso or cold brew at the fuller roast levels.
