Green Coffee Beans
Coffee trees in Papua New Guinea have a year-round growing season due to a combination of perfect temperatures and altitudes. Most of the premium green coffee beans coming from Papua New Guinea originate in the Highlands region which stretches the length of the island, are covered in tropical cloud forests and have relatively dense human populations.
Known as smooth and very clean in its flavor profile, Papua New Guinea coffee stands out for its sweetness. Flavor notes are rich and chocolaty with a bit of spice and can include honey or melon.

Similar to the Sigri coffee but with just a pinch of brightness and no fruitiness, very clean in its profile. Smooth, rich and chocolaty with some spice note accents. Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with minimal herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk. Best served in the medium to dark roast levels but some will find joy at lighter roast points with a longer setup.

Silky smooth and clean tasting, fuller bodied with a creamy mouthfeel. Lower acidity chocolaty cup with a sweet edge. We liked it best from a medium to dark roast, but with a little longer setup, light roast fans can find joy with these beans. Definitely a chocolaty cup profile with some cool nutty and herbal/spice accents. If you roast before 2nd crack, which is preferred, one can balance in some melon and fruit acidity into the mix which is a big plus to the depth of flavor. Cup starts sweet at lighter roasts but will turn semi-sweet as you pushing into medium or dark roasts.

This is a natural processed lot that stands out not only for its taste, but its fascinating origin: the virgin highlands of the Jiwaka Province. Its cultivation takes advantage of one of the best-preserved Typica variety arabica genetics on the planet, a heritage from the early plantations introduced in the early 20th century. The production of this particular lot is made possible by Monpi Coffee and the Kindeng wet mill, where the finest cherries grown by local smallholders are meticulously sorted and sun-dried for a full month, taking advantage of the cool mountain climate. Beyond its deep background in sustainability, community support, and environmental preservation, this bean translates into an exceptionally sweet and wild cup of coffee; a product that, when roasted to a medium level, unfolds highly fruity notes, floral touches, and a citric acidity that is characteristic of old-world natural coffees.
