Mexican coffee typically has a mellow and fruity sweetness. Known for a delicate body, tart acidity, and dry finish, notes of citrus, fruit, vanilla, toffee, and chocolate are on full display for the drinker’s delight.

A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

A very nice medium to dark roast decaf. Medium roasts are a much smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Always one of our favorite Mexican coffees . A little fuller bodied, lower acidity, just a hint of citric at lighter roasts, semi-sweet nutty & chocolate tones, a lovely daily drinker. Lighter roasts accentuate some floral and the sweeter tones, but can risk a little herbal note if too close to 1st crack. Medium to just before 2nd crack will produce smooth defined and balanced cups. Darker roasts get edgy and strong, smoky nutty and bakers chocolate tones.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools.
