Green Coffee Beans
With a long tradition of coffee cultivation and enormous plantations, Brazil easily leads in overall coffee production with a whopping 30% of the global total!
Brazilian coffees are known for a smooth body and low acidity. Flavor profiles typically make chocolate and nuts the star of this show. Expect hints of toasted almond, milk chocolate or the darkest of cocoas.

The aroma is very nutty and sweet. There was a surprising hint of smoke on the palate. Full bodied and low acidity – this is a traditional tasting Brazil – thick, creamy, nutty and semi-sweet. At the darker roasts a very sweet first taste, almost a little fruity, and then quickly turns darker-toned with a bakers chocolate and slightly toasted walnut flavor. Great blend base for espresso or adding body with darker tones although many will love it as an single origin drinker.

A traceable Yellow Catuai natural from the family farms of Pirapitinga, brought to us through FAF Coffees and the Bob-O-Link project in Brazil’s renowned Mogiana region. Grown at 1,200–1,350 meters and gently dried on raised beds, this is a clean, sweet, and stable cup that punches well above the average Brazil: orange and a hint of cranberry up top, settling into roasted nuts, soft herbal tea, and a rich semi-sweet chocolate as the roast deepens. Versatile from light to dark, it shines as a single origin for drip or espresso and makes a fantastic, sustainable base for a small-farm Brazil blend.

A high-grown natural Catuai from the Serra dos Ciganos mountains of Caconde, brought to us through FAF Coffees and the Bob-O-Link project in Brazil’s renowned Mogiana region, one of our oldest and most cherished Brazilian relationships. Hand-picked at peak ripeness and gently dried on raised beds, this is a clean, rich, and balanced cup we’re happy to drink all day long. Expect a nice sweet edge across the roast spectrum: toffee, peanut, and a touch of citrus at the lighter end, turning smooth and chocolaty with classic Brazilian nuttiness as you push it toward medium and dark. Far from your average Brazil, this is a more traceable, sustainably farmed lot from the harder-to-access family plots of the “other” Brazil. It shines as a single origin for drip or espresso and makes a fantastic base for a small-farm Brazil blend.

Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

A great cup from light to dark roasts. We thought it shined best on the lighter side of a medium roast, a city+ most would say. The sweet and nutty tones give a hint of caramel with a little setup. Shows some citric acidity upfront but would be considered a lower acidity cup overall. The brighter features comingle with a medium bodied nutty/cocoa undertone and a sweeter edge. Reminds me of a nice Honduran coffee more so than a traditional Brazil, a bit nuttier. Medium to dark roasts mute the brighter characteristics providing a very smooth cup that works a little better for daily drinking or espresso. Turns much more chocolaty the darker you roast, still retains a little nuttiness in the aftertaste, a bit roasty if you touch or go into second crack but it compliments the beans characteristics.
