A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

Brazil Mogiana Guaxupé 17/18 FC SS
A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

Colombian Org. Excelso – BCT Select – Small Holder Washed
A nice clean cup, tasty from from medium to dark roasts. Fuller bodied cup with some pleasant acidity. Classic Colombian, toasted walnut and baker’s chocolate like darker tones comingle with soft acidity and medium sweetness levels. Light roasts can be a little acidic, stronger on the citric notes with just a pinch of soft fruit. A longer setup time is nice on light roasts to mellow it out a bit. Medium roasts accentuate the semi-sweet thicker nutty/walnut like tones with a little spice in the aftertaste, still has a gentle brightness upfront but brings nice balance and a little sweeter edge to the cup. Darker roasts accentuate the semi-sweet tones, turns a bit roasty tasting but works with its fuller body with a creamy mouthfeel, a good roast point if you use a splash of cream.

A little hint of acidity at the medium roast point really creates a nicely balanced cup with a broad flavor profile. A lovely & fresh coffee, our first new crop Peru. Best from medium to dark roasts, a good daily drinker. Medium to low acidity, with a thicker body and mouthfeel. A wonderful more chocolaty cup than shows some nuttiness. Lighter roasting will show just a pinch of citric, which provides nice depth of flavor but be a little careful ligher, too light will show some grassy/herbal tones. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a peanut brittle like tone (some may say hint of caramel), not quite candy like, more peanut than brittle but we all thought it to be a good descriptor.
