Great cup from medium to dark. The cup profile is mostly down the malty/chocolate side but these beans will also have some nice floral aromatics and some soft fruit tones providing great depth of flavor. A wonderful rich, sweet, smooth and clean daily drinker.  Guatemalans almost always hold dark roasts nicely for adding a little sweet malty note to the smoky and roasty tones is a tasty mix.

Our first single farm decaf is quite some time! Most decafs are small holder or co-op blends. We feel single farm production is always the best sourcing model, but is often a bit more expensive. Luckily this cup has a taste to follow the price tag. A very fun offering for our decaf drinkers.

A fresh and tasty batch of Decaf! MWP is Mountain Water Processed, a very wholesome non-solvent based decaf method.

Finca Santa Isabel has been owned by the Keller family since 1899. For the last twenty years, they have grown coffee using biodynamic, organic farming practices.

Mountain Water Process coffees are decaffeinated using pure spring water from Pico de Orizaba, the highest mountain in Mexico. Each batch of beans is steamed to create a green coffee extract, which is passed through a filter to remove only the caffeine content, then re-introduced to the green coffee. This process retains all the flavor and nuance inherent to the green coffee while removing 99% of the naturally occurring caffeine, all without the use of chemical additives or solvents.

Roasting Notes: A nice easy to roast decaf. Err a little darker than lighter and you will always have a tasty cup. A quicker roasts leaves it a little thinner but sweeter and crisper, a slow roast will build body and creamy factor but will lose a little sweetness.
