A top notch new crop Mexican arrival! We have been waiting patiently (well, not so patient for some) for a stellar new crop lots of Mexican and they have finally arrived!
Mexico Oaxaca Pluma San Sebastian Coatlan is sourced from eighty family-owned farms located in San Sebastián Coatlán along the slopes of the Sierra Sur region within the state of Oaxaca, Mexico. On average, each producer cultivates coffee on 4 acres of land and relies on the income from coffee production for a living. Farmers process coffee with their own micro-wet mills and dry the coffee in the sun on patios before transporting the coffee in parchment to a centrally located dry mill facility where the coffee is prepared for export.
Tasting Notes: Best in the light to medium roast ballpark. Sweet citric and floral comingle with a woody/nutty dark tone creating some nice hints of caramel. Clean and balanced cup with great depth of flavor. Light to medium bodied, medium to low acidity with a sweet edge. Works at dark roasts as well, turns a bit chocolaty while retaining its sweet edge, but will burn out the floral/caramel balance that we thought best about these beans.
Roasting Notes: This cup will appeal to both light and dark roast fans. Clean enough for a jazzy light roast, interesting and strong at the darker roasts. Medium roasts really bring forth the nice sweeter nutty/caramel tones. Medium chaff and even roasting. A little extra setup time can smooth out a subtle sour edge.
