Panama Premium Boquete – Garrido Estates – Washed SHB
New Crop! A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level with a great balance between the lighter winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.
Panama Premium Boquete – Mama Cata Estate – Typica Washed “Cañazal”
Great from light to dark. Light roasts will show great depth of flavor and produce a very clean cup. Some acidity, which brings lemony and floral tones to the front end of the tastes, balances them with a sweet edged nutty/malty undertone, hints of a vegetal spice. As one pushes the roast a little darker, the body increases, as the acidity and vegetal spice dissipated. Made for a very lovely daily drinker in the medium roast range; sweet, smooth & complex. Pushing the beans darker, the citric and floral acidity drops nicely to a crisp hint or none at all, the malty tones can turn quite robust as you approach or touch 2nd crack. Sweet, smoky, roasty and malty.
Panama Premium Boquete – Mama Cata Estate – Caturra Washed “Porton”
A super snazzy coffee! This is a great cup from light to dark, but similar to the rest of the Panama lineup, what separates these from average will mostly be seen in the light-medium roast range. A very highly rated and clean cup of coffee, but also the most traditional tasting; floral, nutty, malty, fuller bodied.
Panama Premium Boquete – Finca Stacy – Caturra Washed
Great cup from medium to dark roasts. Unlike many of the other Panama offerings, this is a lower acidity cup, fuller bodied and on the malty/herbal side. We like it best at a strong medium roast; smooth, semi-sweet & rich with a complex dark tone. It will turn itself into a roasty and strong malty/baker-chocolate like cup once you hit 2nd crack. Clean enough bean for lighter roasting, will introduce a hint of floral, and presents it a little sweeter, but seemed to promote the herbal spice of the cup, instead of the tasty malt like notes that the medium to dark roasts give.
