Best at a medium to dark roast: bigger bodied and darker toned. Lighter roasts will show some nice clean lemony floral acidity but do not fully develop the nice robust chocolaty factor, interestingly enough, one gets a bit of African herbal/spice in the cup at the lighter roasts. Medium roasts are where we thought it shined, just a small hint of citric sweetness upfront with a good balance of spicy chocolate notes, unique spice, more like the Indian coffees. Lighter roasts will show stronger lemony floral tones, with good body but will balance with a bit of herbal/vegetal darker tones, kind of like an African coffee, will not fully develop the nice robust chocolaty factor that fuller roasts achieve. A wonderful very clean example of natural processing, best served in the light to medium roast levels. Medium acidity levels, comes off a bit on the lemon side, medium bodied with a pretty strong red fruit tone upfront, definitely on the sweeter side. Super light, cup picks up a bit of nutty and herbal contrast but this will develop into more spice and chocolate tones just a little after first crack. Thicker and stronger than an Ethiopian Natural, with more of an emphasis on the fruitiness and spice notes. Darker roasts accentuate the spice, pretty similar to the other Asain coffees, would put in on the rustic chocolate side with sweet and fruity overlays and a full body.Price: $8.49/lb - 7.29/lbPrice: $8.49 -

A good daily drinker with an exotic spin. These beans pull a bit of what I would consider the European style spice notes. A bit peppery, a bit herbal, different but very tasty. Lighter roasts will show some lemony acidity with stronger more herbal spice notes, comparatively to the other Thailand offering, think Kenya but a little milder. A little chocolate undertone but it’s pretty overwhelmed by the spice notes. Holds up light roasted industry wise (a nice clean cup) but most will enjoy it a bit more medium to dark. Easier to drink medium roasted; smooth and more delicate with some balanced acidity. A good daily drinker with an exotic spin. These beans pull a bit of what I would consider the European espresso spice note. A bit peppery, a bit herbal, different but very tasty. Lighter roasts will show some lemony acidity and faint hints of spicy bakers chocolate, holds up but we found medium roasts to be our favorite and dark roasts to be quite tasty as well. Easier to drink medium to dark building the body and rich darker spice notes while muting up some of the more lemony floral aspects. A nice and clean taste, good from light to dark. Mostly these beans will appeal to medium-dark roast fans but being an exceptionally clean cup, it has some lovely balance and is quite tasty at lighter roasts. Similar to its Indonesian cousins (except washed processed), it gets real hefty into the dark roasts promoting smoky and chocolaty tones with stronger spice notes. Lighter gets a bit floral and sweet edged, still fuller bodied like the fuller roasts, hints of a chocolaty factor but more dominated with a “European espresso” lingering spice notes. The unique spice note is far muted comparatively to drinking a Robusta coffee but one can see its heritage and linkage in the cup.

Best at a strong medium to dark roast. Fuller bodied, lower acidity, full of classic Robusta tones. Most call it an earthy spice, semi-grainy. A unique taste only found with other Robusta coffees. European espresso generally uses Robusta along with cheaper Latin American domestic coffee, so some might recognize the tones. This is a good example & grade of Robusta, but be in for something different if used to Arabica tastes.

A tasty cup from light to dark. Lighter roasts will have stronger citric floral acidity that will fade into wild semi-boozy red fruit tones. Those lighter tones balance out with a more rustic chocolaty dark tone, a sign of its Timor heritage. All in all, lighter roasts will produce a sweet edged cup with a fuller body and higher acidity. A great roast level for more new-wave coffee heads.As one pushes into the medium roast level it cuts out most of the citric and floral tones. A much smoother cup with plenty of sweetness and fruit tones, It will lean the dominating taste to the more rich & rustic dark chocolate side. A little easier to pick it out as a Timor coffee from medium to dark. Smooth, rich, sweet and fruity. Not nearly as sharp as lighter roasts, a good starting point for most natural fans.
Dark roasts hold well, usually it burns out the delicate fruity/floral on most naturals, but being a Timor, the great body and strong nutty/chocolate tones pop right out, a bit smoky and less sweet than lighter roasts, hints of fruitiness in the cup and aromatics but not as noticeable in the taste until the cup cools.

A very tasty aggregate production (co-op called CBS) coffee coming from the Letefoho sub-district of the Ermera municipality in Timor.
Similar to much of Indonesian, Timor has its own strain of coffee that naturally crossed an Arabica strain with a Robusta strain creating a wonderful hybrid that has now been used around the world. Although this happened naturally in Timor, the idea behind this is currently saving the coffee industry. As climate continues to change and world trade keeps expanding, coffee has been getting hit with a lot of disease and pests that Arabica plants are susceptible to but Robusta is not. These hybrid strains have been keeping the farms alive and over the years and they have really dialed in a unique and tasty cup with the strain over the years.
