Basically you have lots of folks in prime but very remote coffee growing areas, who have no way of effectively producing or processing top notch lots. They have the trees and farming expertise but the processing end for top lots is very pricey and usually they end up selling the fruit to a large mill for under market prices. Not these beans, this is an example of a farmer group that has come together to get around the hurdle of processing top notch lots and gathering an exportable high end product by banding together.

El Tambor, a familiar name from our coffee list! A wonderful award winning lot from one of our favorite Guatemalan coffee families. Took 25th place this year with this Pacamara Washed. Check it out here.A lovely cup! Bolder than the Gesha coffees with equally as strong floral/fruitiness upfront. The fruitiness is more citric/tropical with a lot of depth to it, not like a fruit bomb natural. Even at the lighter roasts, it has great balance with a more tea like chocolate undertone. A bit fuller bodied with a wonderful mouthfeel. Ending the roast right as first crack was subsiding, still a little sharp but turned out fantastic with a longer setup, the best roast point to accentuate the more fruity floral tones. Pushing a shade or two past first crack was a beautiful cup the next morning and brought out more rich and smooth darker undertones.

This is the sizzling, very bright offering out of all the COE coffees, crazy being a Maragogype offering. Almost all the others I have tried over the years were low acidity and bolder coffees, very cool to see a stellar one. Definitely a cup to remember. Floral and lemon will hit you over the head at light roasts. Very sweet cup with some fruity character within the brighter more citric cup profile. Incredibly clean cup which will pull some balance and clear tones at lighter than normal roast points. Similar to the Pacamara, some tea like spicy dark tones in the aftertaste, medium bodied with great mouthfeel. This cup is highly rated for it’s floral/citric/fruity front end, rare attributes and strong enough to not burn out at fuller roasts. Making this cup very tasty and unique from light to dark.

Wow, who would have known that one of the best Guatemalan farms, and Panama farms, would both be named Mama Cata. No relation besides the fact they grow some of the world best Gesha coffee, at crazy high altitudes. Although we have not done Guatemalan Mama Cata coffee before, they are friends with Edwin from Finca Vista Hermosa, and the tastes of this coffee sell it, we could not pass it up. Check it out here.This cup defines the Gesha strain, one sip or one smell and you know you have something special. keep this lighter roasted! Sweet, clean, delicate with all sorts of flavor diversity. Jasmine tea like aromatics that cut right through in the cup tastes. Soft fruit tones (super clean, not like a natural), with a little lemony crispness balanced with a little black tea like spice in the aftertaste. A couple tasters thought it nailed both the jasmine and bergamot tones so sought after in the strain, bergamot was a little more of a stretch at lighter roasts, but pushing a medium popped right out, only downside, by a medium roast, the more jasmine like aspects were starting to burn out, so a fine line to get both in the cup.

This cup falls about half way between an Antigua and Huehue. Lighter roasts show a more Antigua style cup profile, a little hint of floral with some nice and smooth chocolaty notes, a little thinner and sweeter. As one pushes the roast a bit further it develops into more of a malty tone and the acidity falls off, still a sweeter edged coffee up until 2nd crack, which turns it a bit stronger and smokier, much dryer darker toned complexity.

A great cup from light to dark. Clean, sweet edged and balanced. Atitlan coffee seems to fall right between and Antigua and Huehue in taste. The brightness is more floral than winy, similar to a nice Antigua. It’s darker tones seem more similar to a Huehue, coming off on the malty side. Light roasts will have some stronger citric tones but were surprisingly clean and defined. Medium roast were smooth & sweet, medium bodied with much less citric crispness, brings the nice and rich malty tones to the foreground.
