This Ethiopian cup is a bit more delicate and complex than your average Ethiopian. Lighter roasts will have some decent brightness, lemony with some soft fruit tones, peach and grapefruit like accents. A pretty floral cup with some awesome jasmine like aromatics. The lighter tones pull some balance with the classic tea like chocolaty undertone, traditional darker notes from the Yirgacheffe region. Medium roasts really mellow out the acidity and reduce the fruit tone, create a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate tones.

Crisp, clean and sweet; this Ethiopian cup is a bit more delicate than most. Light to medium roasting recommended but a tasty cup from light to dark. Lighter roasts will have some decent brightness, lemony with some grapefruit like citric tones. A floral cup with some awesome hints of jasmine in the aromatics. The lighter tones pull some balance with the classic tea like chocolaty undertone, traditional darker notes from the Yirgacheffe region.
Medium roasts really mellow out the acidity and reduce the citric/floral tone, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate & spice tones.

A great clean exotic cup of joe. A little mellower at the lighter roasts than some but clear floral and soft fruit tones upfront balanced with a classic herbal tea like chocolaty undertone. Some good brightness on the lighter roasts and will give a citrus edge but pretty mellow close to 2nd crack and into the dark roast marks. Turns very strong and chocolaty, more of a bakers chocolate and smoky into the dark roasts.

Very clean cup following the traditional Washed Ethiopian profile. Jasmine/floral like aromatics add a wonderful layer of complexity. Lighter roasts have a sweet lemony citric edge balancing with a smooth and delicate chocolate undertone. Medium body and brightness levels. Definitely has some floral characteristics that pop right out as well as some hints of spice that get accentuated into the fuller roasts. Easy to see those unique tastes coming from the heirloom strains. Medium roasts gentle out the cup, smooth most would say. Although it still retains hints of floral, the cup becomes more about the chocolate notes with some exotic aromatics and spice that linger in the aftertaste. Darker roasts will be very low acidity and strong, not as smooth or exotic, but has a strong bakers chocolate note many will enjoy. A cool traditional washed Ethiopian cup! Medium to borderline dark roast are where this coffee will shine for most, works lighter or darker for those who tend to like such things. The light roasts are pretty high acidity; lemony, floral and slightly sour with a hint of herbal, chocolate and earth. Medium roasts cleanse the cup of the earthier notes and balance out the acidity leaving a nice classic “peachy” acidity, jasmine like aromatics and smoother spicy chocolate notes. Crisp, clean and exotic. Great aromatics: nothing like grinding a fresh Ethiopian with its floral, jasmine and spice notes to tickle your nose. Lighter roasts are filled with new crop acidity and floral notes, mostly citric but a little peachy soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts have just a pinch of citric acidic, builds a thicker body and brings forth more of the chocolaty cup profile, reducing the acidity slightly. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. Good from light to dark but we thought best at a strong medium to dark roast. Light roasts are more citric and floral with wonderful aromatics a sweet edged, a bit punchy in the citric department and very little of that wonderful chocolate tone that fuller roasts will bring. Medium roasts will bring some lovely balance to the cup, less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. A pinch of crispness upfront on top of a well developed chocolaty base tone. A unique spice note pops out, a stretch for some, but we would say slightly minty. Darker roasts are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

A great semi-exotic daily drinker. Best right around the medium roast mark but holds darker roasts nicely as well. Lighter roasts do show some jazzy acidity but its pretty mild for an Ethiopian, good to build the more chocolaty tones by not ending the roast too light. Fuller bodied for a Yirg with less than average acidity, hints of floral before 2nd crack but its mostly in those wonderful aromatics, hints of jasmine and soft fruit let you know its something special. A bit sweeter and smoother, less tea like chocolaty factor than its cousins, some could mistake it for a clean Central American cup if not for those unique aromatics and small hints of spice.

Grade 2 washed Ethiopians are often decently higher acidity, a bit sharper more lemony floral cups balanced with stronger edgier chocolaty cup profile and these beans are no exception. Far less subtle of a cup than the current Gr. 1 offerings but just as tasty. Wonderful fruity and spicy aromatics. Lighter roast have a good acidic kick that comes off mostly citric and lemony with a nice floral spin, a hint of balance with a herbal tea like chocolate tone. Watch the lighter roasts a bit close, too light and one can get a little grassy edge to it. Medium roasts are where this cup shine, one gets a full flavored cup with nice balance between the floral citric and tea like darker undertones, most would consider it a pretty chocolaty cup with a sweeter edge, a hint of soft fruit can be found but is pretty faint. A tasty brighter, more floral Ethiopian offering best presented at the lighter roast points. Full of lemon and soft fruit tones balancing with hints of tea like spice notes. A very clean cup allowing one to roast pretty light without much risk of grassy, muddy or nutty tones, a true sign of quality. Medium roasts bring a little reduction to the acidity but doesn’t cover it up completely in the cup, a bit more of the chocolaty tea like spice which many Ethiopian fans love. Dark roasts are tasty but much less exotic, bakers chocolate, smoky with slight tea like accents.

Lighter roasting shows some vegetal/spice characteristics, a little earthy chocolaty note and just a touch of floral. Medium roasts have a little chocolaty edge with some herbal spice. Darker roasts get smoky and full of bakers chocolate tones, roasty some would say. A bit edgier bringing some less neutral characteristics to the cup.

A hint of peachy acidity upfront, slight floral and citrus fading into a more potent chocolaty cup profile with a lingering herbal spice note that sticks in the aftertaste. Turns a bit higher acidity at the very light roasts and is more citric and fruity but will bring out the earthier side of the chocolaty notes. A tasty coffee from light to dark but if you want to see it shine, keep it in the light to medium ballpark. Jasmine, floral and peachy aromatics that come though in the cup tones. Very clean and defined at light roast points, a sweet edge, light to medium boded, with a smooth chocolaty balance, just a touch of a spice note. Darker roasts get a bit fuller bodied, semi-sweet with more robust chocolate notes, hints black tea spice. Gets a little roasty but compliments the more chocolaty aspect. Although the recommendation is to roast this one lighter, traditionally in Ethiopia they tend to roast very dark. Light to medium roasts make a stellar drip or pour over, if an espresso head, good to go a little fuller on the roast.
