This Yellow Catuai coffee is from Fazenda Sitio da Torre, located in the Mantiqueira de Minas region, a protected origin within the state of Minas Gerais, Brazil.
Álvaro Antônio Pereira Coli has managed Sitio da Torre for 20 years, the same land that his great-grandfather purchased in the late 1800s when he immigrated from Italy. Álvaro has built an impressive reputation for quality consistently recognized in the Brazil Cup of the Excellence competitions over the last decade.
Tasting Notes: Good body and clean, a more complex than average cup that follows the traditional Brazilian profile. Nutty and sweet turning slightly chocolaty into the darker roasts. A little hint of crisp acidity at the lighter roast points provides a soft fruit tone as the roast develops and as the cup cools.
Roasting Notes: Good from light to dark but following the traditional Brazil taste profile, most will like it best give or take 2nd crack. With a little magic you can get a slight caramel tone in the taste at a nice medium roast with a little longer setup.
