Grade 2 washed Ethiopians are often decently higher acidity, a bit sharper more lemony floral cups balanced with stronger edgier chocolaty cup profile and these beans are no exception. Far less subtle of a cup than the current Gr. 1 offerings but just as tasty. Wonderful fruity and spicy aromatics. Lighter roast have a good acidic kick that comes off mostly citric and lemony with a nice floral spin, a hint of balance with a herbal tea like chocolate tone. Watch the lighter roasts a bit close, too light and one can get a little grassy edge to it. Medium roasts are where this cup shine, one gets a full flavored cup with nice balance between the floral citric and tea like darker undertones, most would consider it a pretty chocolaty cup with a sweeter edge, a hint of soft fruit can be found but is pretty faint. Darker roasts get rich and chocolaty but a bit bittersweet and very smoky if roasted super dark.

Description

A great and super fresh new crop arrival! The best deal we have seen on an incredibly fresh and tasty washed Ethiopian in quite some time!

Coming from small family owned farms located in Gelana and Abaya woredas (district). These two woredas are located in the Oromia Region in Ethiopia. Ripe cherries are carefully selected and immediately placed on raised beds that are constructed to ensure proper air circulation and temperature control for an optimal drying process. Cherries are also turned regularly on the beds to prevent damage during the drying process. The cherries are stored in a local warehouse after the moisture is reduced to between 11.5 and 12 percent, and then transported to Addis Ababa where the coffee is milled and exported.

Roasting Notes: Still considered easy to roast but not quite as easy as some. A beautiful bean but will roast a little two-toned. One will notice about 20% of the beans roasting a little lighter than the others, normal being a more wild aggregate, a occasional super light bean can be found in the mix, not a bad idea to flick it out if shooting for light roasting. Medium and beyond will be easy roast points to hit. A tasty treat and well worth playing around with.
