Description
Coming from family-owned farms located in the region of Cajamarca, Peru. The coffee is harvested by indigenous families on farms averaging 4 hectares in size. Farmers strive to protect the environment where they live through responsible water management practices, application of organic fertilizer, and shade grown farming.
Tasting Notes: A great everyday drinker! Lower acidity and fuller bodied, this is a great cup from a medium to dark roast. Nutty and chocolaty with some good sweetness upfront. Lighter roasts will show hints of acidity which some may enjoy but it will turn the cup a little thinner. Dark roasts add some smoky tones get a bit stronger turning the cup more bitter-sweet.
Roasting Notes: Easy to roast, just avoid super light roasts. A quicker roast will leave it a bit crisper but thinner, a slower roast will increase the creamy factor and really build the nice chocolaty side of the cup.
