This is a farm that holds a special place in our hearts. Gathered around an extinct volcano, Cerro San Juan, a committed group of 260 cooperative coffee farmers are working together to produce arguably the best coffee in Mexico. Terruño Nayarita coffees come from heirloom trees. The word ‘Terruño’ means ‘homestead’. These are farmers that take great pride in their coffee.

Always our favorite Mexican coffees . A little fuller bodied than most lots, good sweetness and full of floral, nutty, caramel & chocolaty tones. Lighter roasts accentuate the cool floral & caramel qualities but will have noticeable lemony citric crispness. Medium to just before 2nd crack will produce smooth defined and balanced cups. Darker roasts get edgy and strong, smoky nutty and bakers chocolate tones which some will definitely like as well
Roasting Notes:
Tasty from light to dark but I would shoot for a nice medium roast to start. A little bit of a rougher cup into second crack but very chocolaty with just a hint of a floral aromatics, a smoky finish. A bit more delicate, sweeter and smoother at lighter roasts. A good bean to play with different roast levels. Even roasting with medium to low chaff.

This is the first time we roasted coffee and selected these beans and it does remind us of Kona as we usually drink Kona coffee from a farm in Hawaii. The coffee we roasted was very good and also turned out very smooth.

For years this has been our go-to favorite. Consistent, rich and smooth but with nice complexity of fruity flavor…
We roast all our beans on the light side, so tend to pick coffees with that in mind. I could live with this coffee for “life!”

IMO these beans I have personally roasted weekly are my favorite.Better than Kona IMO,I lived Hawaii 13 years..Also many people who I’ve gifted with Nayarita and other coffees say the Mex was best…

This turned out to be a great coffee. I was pleasantly surprised as my prior experiences with coffee from Mexico was underwhelming. Roasted passed FC but shy of SC. The beans had chocolatey notes, made a very smooth cup of coffee.

We love this Mexican bean! We get lemon, spring flowers, and light caramel for tasting notes.
My wife an I are small-time roasters that roast for a local farmer’s market. We use a Gene Cafe that we bought from Burman. After playing around, this is how we roast this coffee.
We roast 9 ounces at a time. I preheat the Gene to the first alarm, then let it shut down and run the cool cycle to 140. After we add the beans, we roast at full temp until first crack starts at 9.6 minutes. We then reduce the temperature to 420 and let it roast for 2.0 more minutes. After that, we let the cool cycle run.

As a regular pour over this coffee didn’t blow me away. It’s a nice coffee, though. As a concentrated cold brew it’s phenomenal, especially with a splash of cream. Straight chocolate brownie with some walnut hints and maybe some caramel in the background. It’s a bean I definitely want to experiment with more.

You can tell from the number of reviews that these were some fantastic beans. Upon grinding, these beans released an amazing coffee perfume that filled the room. Unfortunately, I bought some Mexican Terruño Nayarita – Regional Select – Natural Processed beans a year later and they were okay but not at all the same. I look forward to the day that Burman’s gets these beans again.
