Mexican Terruño Nayarita – Cuarenteno Floral Reserve – Washed Processed

Always one of our favorite Mexican coffees. Good from light to dark but our favorite was a medium roast. Medium to full bodied, medium to low acidity. Lighter roasting will promote a sweet citric edge balancing with a bit nutty/woody undertones. Has a hint of caramel after a couple days setup but risks keeping a little woody tone if too light. Medium roasts are pretty bullet proof, full bodied with rich chocolaty notes, a little nuttiness and vanilla like spice in the aftertaste. A clean cup with just a hint of citric crispness upfront. Darker roasts pick up a bit of roastiness but it compliments the very chocolaty profile, thick with no real hints of brightness. A good coffee for stronger chocolate tones at darker roasts.

This is a co-op that holds a special place in our hearts. This coffee is from 100% traceable, directly traded micro-lots. Each bag is uniquely identified with a bar code and a serial number which can be used to see everything behind its production, click here to check it out. Gathered around an extinct volcano, Cerro San Juan, a committed group of 260 cooperative coffee farmers are working together to produce arguably the best coffee in Mexico. Terruño Nayarita coffees come from heirloom trees. The word ‘Terruño’ means ‘homestead’. These are farmers that take great pride in their coffee. This is the top screen-size/grade from the Terruño Nayarita Co-op.

Roasting Notes:
A nice medium roast is the way to go, can lean it a little lighter or darker depending on personal taste. A little extra setup time makes a noticeable difference to the depth of flavors. Even roasting with medium chaff levels, a lovely bean screen being a reserve grade coffee.
