Description
Adonis Benitez produced this micro-lot on a 37-acre farm called Las Brisas located in the community La Retumbadora within the municipality San Juan in the department of Intibucá. Adonis uses his own micro-mill to process harvested cherries, which allows for meticulous care in depulping, fermenting, and drying the coffee.
A wonderful higher rated Honduran with full traceability! As a little forewarning, higher ratings equal higher acidity. This is still not a crazy high acidity coffee but definitely a bit more citric than our Honduran COMSA coffee. The acidity is a huge perk in the cup, sweeter and more delicate with caramel, floral, nutty and chocolate like tones.
Adonis collaborates with an export company called BICAFE, which operates a warehouse and dry-mill in Santa Rosa de Copan. Weather conditions in Santa Rosa are ideal for storing parchment and the dry-mill is specifically designed for preparing micro-lots. The partnership has helped to improve quality, increase earnings from coffee sales, and strengthen the family’s livelihood.
Tasting Notes: A very nice and clean Honduran offering, great from light to dark roasts. Our favorite roast was on the lighter side of “medium”, too light one gets a pretty strong hit of lemon citric upfront Just a little development past first crack and it turns more nutty/caramel/chocolate like with a mellow citric crispness. As one gets a bit closer to 2nd crack than first, the cup turns much more chocolaty with a little nuttiness in the aftertaste, pretty much all the citric will be gone from the tastes and it will pick up a little hint of roasty/smoky like tones. Touching or into second crack, it is very chocolaty and sweet, with a pretty strong hit of smokiness in the aftertaste, which we thought complimented the cup.
Roasting Notes: Easy to roast, even roasting with medium to low chaff levels. A nice medium roast will make everyone happy but we recommend erroring it a little lighter than darker to showcase the cleaner tasting cup profile. Good to be a little patient after roasting, day 2-3 was pretty prime time for the cup. If drank too soon, it will have a little herbal spice taste, especially at the lighter roasts.
