Best served light to medium roasted. This is the brightest Guatemalan offering out of the bunch, crisp with sweet citrus, floral and soft fruit upfront, balancing with a nutty and malty darker tone. The Tabi strain brings a more “rustic” malty tones compared to traditional Guatemalan strains, but is not earthy like many hybrid coffees. Medium roasts build a little body and mellow the citric/fruit notes, less sharp of a cup with a stronger malty tone, the more exotic fruit tones and layers of tastes still come right through in taste but are muted slightly compared to lighter roast points.

Description

A stellar & unique single strain coffee. Fruit forward with higher acidity, super clean and balanced: a good choice for lighter roast more new wave coffee fans. Although you may recognize the name Finca Vista Hermosa, this is not from the Martinez family, but from another wonderful coffee farmer on the other side of Guatemala, whose farm also has a very “beautiful view”. Santa Rosa is in Southern Guatemala, while Huehuetenango is North, almost on the Mexican border.

Fredy Orantes, who owns/operated this Finca Vista Hermosa has gained a well-earned reputation for meticulously processed coffees that encompass a wide swath of varieties. This naturally processed Tabi varietal is a lesser known varieties with an innovative processing techniques. Tabi is a hybrid coffee bred to be high performing with resistance to coffee leaf rust. Providing a path forward for producers as disease and pest problems keep becoming more and more of an issue.

Fredy hit a home run on this lot, if every hybrid lot could taste this good, it would be easy to switch farmers to these strains. His meticulous picking and processing has put this lot far above average.

Tasting Notes: Best served light to medium roasted. Roasting Notes: A wonderful top lot, beautiful beans. A bit higher chaff, fairly even roasting with pretty normal coloration. If you like crisp, higher acidity and fruit cups, definitely keep this one on the lighter side and give it a little longer setup. If you don’t like acidity, make sure to slow this one down a bit in the roaster and shoot for some development past first crack. Best to error lighter than darker on these beans.
