Description
This is Sebastián’s family coffee a small-batch production from a multi-generational farm in
Miraflores, Gigante, Huila, Colombia. Sebastián, a valued member of the Burman Coffee team,
brings his family’s lifelong dedication to coffee directly to your roaster. Every bean is hand-selected his
parents still sort the coffee bean by bean and the lot is shipped by air to preserve peak freshness.
Grown between 1,600 and 1,900 meters in the Andean highlands of Huila, this
Castillo Arabica undergoes a meticulous washed process that produces a remarkably
clean, balanced cup. The family has refined this method across three generations from Sebastián’s grandparents
who planted the first trees, to his father who perfected the craft, to the new generation now carrying that legacy
across borders.
The result is an exceptionally versatile coffee: bright florals and citrus at lighter roasts,
richer chocolate and deeper body at darker levels always clean, always sweet. A true expression of Huila’s
volcanic soils, generous rainfall, and the care that only a family operation can provide.

Roasting Notes
Versatile Castillo — Beautiful at Every Roast Level
For filter brewing, target City to City+ to preserve floral perfume and citrus clarity.
For espresso, City+ to Full City brings forward chocolate, body, and balanced sweetness.
This washed Castillo responds best to steady, even heat — avoid rushing development through first crack.
Resting recommendation: 5–7 days for peak clarity and sweetness.
