A very pleasant medium to dark roast offering. Very chocolaty (semi-sweet) with low acidity and a little soft fruit tone at almost all the roasts. Lighter roasts bring an almost green apple acidity upfront but risks a little herbal grassy note which develops into the chocolaty factor if pushed a little darker.  Medium roasts are smooth and balanced, lower acidity, medium bodied, a cup one could drink all day. Darker roasts hitting 2nd crack and/or going into it, will add some complimenting roasty notes and smoky tones into the cup which add some great depth to the more bakers chocolate aspects.

Description

Produced by Brack Estate, which is located in the Oxapampa Province within the Pasco Region of Peru. The Brack family first immigrated to Peru from Germany in the 1920s and remnants of their German culture remain to this day in the district of Villa Rica.  Coffee plants on the 300 hectares estate are naturally fertilized with compost originating from coffee pulp.  The bird-friendly estate also has certifications from the Rainforest Alliance and the Smithsonian Migratory Bird Center (SMBC).

This is a real feel good sustainable coffee. SMBC operations are right next to harvesting wild coffee in the jungle, many times they do not look like a traditional farm if looking at the trees. The certification doesn’t allow any impact to the natural forest or animal population.

Roasting Notes: Easy to roast, just make sure to error a little darker than lighter on this bean to get a lovely developed cup. If a little too mellow or herbal, get it closer to or touch 2nd crack. If a little too semi-sweet, take it a shade lighter to add a little more sweetness and crispness.

    This is one of our favorites! Roasted medium, maybe toward the dark side of medium, it has a wonderful rich flavor. We bought 5 lbs of this to roast for family holiday gifts.
