Indonesian Premium Sumatra Gr.1 – Kerinci – Wet-hulled
A very cool cup! Best medium to dark roasted but will hold lighter roasts much better than most Sumatra coffees. Lighter roasts have a little cool lemony acidity upfront, with some soft fruit tones giving it some jazz, balanced with a dry earthy chocolaty herbal factor with some incense like spice. As you push into the medium roasts, it will get fuller bodied with a creamy mouthfeel cutting out the more lemony floral tones, turns the cup much more chocolaty and gives depth to the exotic spice notes. Darker roasts will turn more stout like and semi-sweet. When roasting into 2nd crack one will add some cool roasty and smoky tones into the more bakers chocolaty cup profile.

This cup is nice and chocolaty, lower acidity and medium bodied. A little sweeter edge to it except for super dark roasts. Besides a chocolaty factor one will get some nutty/caramel/floral like tones at the medium roast points, gives it some nice complimenting depth without being too exotic. Ethiopian Yirgacheffe Washed Org. Gr. 1 – Adame Garbota – Single Producer: Desta Golo
A wonderful example of a darker toned, lower acidity Ethiopian. We thought best from medium to dark roasts but it will still find fans at lighter roast points. Lighter roasts will have some buzzy acidity and just a hint of lemon/floral balanced with smooth and rich herbaceous spice notes. A bit more on the bergamot/dark-tea like Yirgacheffe profile. Medium roasts turn the herbaceous notes towards the chocolaty side moving the herbal/tea like tones to the aftertaste. A bit fuller bodied, lower acidity with complex darker tones. Dark roasts turn semi-sweet and even more chocolaty, the spice is readily noticeable and the body picks up a bit of a creamy factor, the roasty/smoky notes mix well with the darker toned profile of this bean but will not hold its sweet edge like most Ethiopians.
