Ethiopia is commonly known as the birthplace of coffee, and when villagers still collect wild beans from uncultivated coffee forests to this day, it is hard to refute.
Our green coffee beans from Ethiopia bring a clean, bright, sweet, and diverse flavor dependent on the roast. These coffees often have a higher acidity, a light to medium body, and sophisticated flavor notes. Known for their syrupy, velvet mouthfeel, Ethiopian coffees often feature citrus and floral flavors as well as peach, strawberry, or bakers chocolate.

This is not a super fruity natural, would be considered a darker toned, lower acidity, chocolaty cup. One can tell its natural processed roots with its sweetness and thickness and its Ethiopian roots with highlights of spice & fruity/floral notes throughout the roast range. Best served in the light to medium roast range for drip brew for it will show its best balance and promote a hint of fruity/floral. Turns into a chocolate bomb at the darker roasts, more on the dark chocolate side, which would work wonderfully for espresso or cold brew. Lighter roasts have a pinch of citric acidity and wonderful aromatics, hints of red fruit that balance with a bit of semi-nutty tea like spice.

This Ethiopian is a bit more delicate, complex and floral than your average joe. Light & medium roasts are where this cup will shine. Decent brightness, stronger lemony/floral tone, some soft fruit accents, down the peach and grapefruit alley. Great aromatics, jasmine & lavender with a little spice note, I love grinding Ethiopians. The lighter tones pull some balance with spiced tea or chocolate undertone, traditional for a bean from the Yirgacheffe region. Medium roasts really mellow out the acidity and reduce the fruit tone, create a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate, unique aromatics but much more plain tasting cup.
