Familia Monge natural from Finca La Esperanza in La Esperanza de Tarrazu, San Jose, grown between 1500 and 1700 masl with Catuai and Caturra varieties and dried on raised beds. To see it shine, go light to medium: light roasts give medium acidity, a lighter body and a delicate, sweet cup with strong red fruit (orange to strawberry), plus citric, floral and candied almond notes. At medium those tones turn into a rich chocolaty factor with cane sugar and dulce de leche; towards a dark roast it gets more oaky at the expense of the fruity spark.

A naturally processed microlot of Catuai and Caturra from Finca El Analia, milled at the Los Madrigal Micromill in Costa Rica’s celebrated Tarrazú region. The mill is run by Diego Armando Madrigal Ureña, who, together with his brother, inherited the family’s farms from their grandfather when they were just 11 and 13 years old. Three farms totaling around 25 hectares deliver ripe cherry to the mill, which dries its coffee on expansive raised African beds, and the brothers are deeply committed to reforestation and sustainable growing. Grown at a lofty 1,800 meters, this lot bursts with jammy passion fruit, perfumey hibiscus, and dried raspberry, all lifted by sparkling acidity and a clean, fruit-like sweetness. As with most expressive naturals, a light-to-medium roast best preserves its bright, floral character and at this price, it’s a whole lot of cup for the money.

This is a quality cup in and out. Lots of cool tones to play with in the roaster. A bit higher acidity with a strong floral aspect, balanced with a full bodied nutty and chocolaty undertone. Slightly fruit forward but not a fruit bomb. The black honey processing really leave a crazy complex cup with tones ranging from lemongrass to red fruit to nutty/chocolaty and smoky undertones. Super light roasts lean the cup to lemony/floral and will be loaded with more citric lighter tones, not very balanced but very punchy and clean. Darker roasts lean it towards nutty/chocolaty more stout like features with fruity highlights. In the middle, one gets layers of all the lovely flavors in the cup. Crisp and clean lemony floral balanced with sweet and smooth chocolaty undertones than linger on the nuttier side. Hints of fruit will pop out but not hit you over the head.

A very nice and clean Costa. Lighter roasts will show that classic Costa sweet floral acidity, a little bit on the lemony side balanced with a little dry nutty/chocolate undertone. As the roasting pushes more into the medium category, the cup develops a bit more body and reduced acidity levels giving a much smoother mouthfeel and more defined chocolaty factor. Creates a wonderful balance of tones. A little lighter floral, a little chocolaty/nutty, very pleasant drinker. Darker roasts hold up nicely as well, turn the cup more stronger and more bakers chocolate like, the roasty notes from darker roasting do compliment the cup. Much more of a chocolate bomb with slightly nutty accents.

The aroma is floral and sweet like honey. A nice medium bodied, smooth & creamy cup of coffee with little stronger floral aspect, medium to low acidity. It does get a good lemongrass tone at lighter roasts with a soft fruit tone as the cup cools, crisper cup with a slight nutty tone. Turns much more chocolaty into the medium or dark roasts. The cup finishes with a pleasantly surprising spiciness. This is a savory cup of coffee with wonderful complexities.
