A lovely, crisp, and clean, not overly fruity natural processed. We thought it best right around the medium roast ballpark but will make fans lighter or darker depending on your personal taste preference. Lighter roasting is a bit higher acidity, lemony and floral with some grape skin like fruitiness coming through. A bit more herbal spice right at first crack, needs a longer setup time to shine but will provide delicate chocolaty notes with much wilder acidity and fruity tones. Medium roasts were tasty without the wait! Balanced, tasty, and clean after 24 hours. A pronounced chocolaty factor, medium bodied, hints of crisp acidity backed with a little soft fruit tone and spice. Wonderfully smooth and delicate for a Congo coffee. Dark roasts were tasty right off the bat as well, roasty and stronger but with a sweeter then average edge. A super clean lot from the Congo; Amazing considering all the trouble this year in the Kivu; beautiful prep on these beans. Great floral and soft fruit tones upfront with a bit of brightness balanced with a tea spiced chocolaty factor, not too overwhelming or potent like some Africans. Smooth with almost a brown sugar hint at a strong medium roast. Pretty much everyone will love this coffee, a great everyday drinker.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Darker roasts are a little more complex than on the washed processed version, but not as smooth and rich.

A great super fresh and clean micro lot from our friends at Finca De Dios. Awesome prep, one can tell a lot of care went into these beans. A great medium to as dark as you want to go bean type. Light roasts produce a lot of floral brightness and light fruit notes (almost reminiscent of a nice Costa) mixing with a subtle yet very sweet malty chocolaty note but can be a little more challenging to roast to a light roast – a great morning brew – darker roasts will produce more body similar to the Huehues – very clean non-roasty dark-roast beans – you get a lot of the sweet malty tones and very smooth even into 2nd crack – a very stand up bean at almost any roast level.

Medium roasting really pulls together a tasty treat but you can take it lighter or darker depending on personal taste preference.
Hints of floral mixing with smooth nutty & malty features. Will show some winy citric and fruit acidity in the light to medium roast spectrum but all in all a medium to low acidity brew with a medium body.
Smooth, clean and sweet edged, a cup we are more than willing to drink all day. Guatemalans almost always hold dark roasts nicely for adding a little sweet malty note to the smoky and roasty tones is a tasty mix.

Bigger bodied and on the chocolaty spicy side of things. Being so clean this cup is great at light to medium roasts as well; hints of lemony floral, crisp, sweet with a more nutty/caramel tone. A good clean cup high rated cup of Honduran coffee. Good cup from light to dark. At light roasts it will have some lemony acidity and a sweet edge, pulls some balance with a more peanut like nuttiness. Medium roasts introduce a more chocolaty than nutty tone and mute up some of the citric making it a bit smoother of a cup but also less complex, good daily drinking territory. Darker roasts taste nice but will have some roasty/smoky characteristics along with a good body. A rich and sweet cup for dark roast fans.

A beautiful tasting bean this season: slightly fruitier but still balances with traditional Indonesian character. Hints of acidity with stronger fruitiness at lighter roasts, strong fruit/oak tones on a more nutty/earthy/chocolaty profile at darker roast points. No missing the wild side in this cup. Medium roasts are where one should shoot for their first roast, mutes some nutty tones and pronounces the chocolaty factor for some balance, still plenty of wild fruity natural processed tones in the cup. Dark roasts will introduce some smoky accents but retain great sweetness. A nice tasting coffee from light to dark. We thought it best right around a medium roast for daily drinking but depending on what you like, holds up well lighter or darker. Light roasts one can see the linkage to Kenya; citric and floral upfront, a sweet edge, thicker chocolate/spice undertones, hints of caramel with a little setup in the aftertaste. Not as punchy as most Kenyan offerings, but along the same line of tastes. Medium roasts really mellow the cup. Smooth most would say, a bit more neutral with just a hint of the floral and spice seen at the lighter roasts. Reminded us of a cross between the Mysore Nuggets and a nice Costa Rican coffee. Great for daily drinking. A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

A clean, sweet & smooth cup. Best at the lighter roast points but works nicely in the medium roast range as well. Lighter roasts focus the tastes more around the brighter citric/fruit tones: a hint of lemony citric that fades into a fruitiness, balancing with a darker malt like undertone. A good daily drinking lighter roast coffee. Comparatively to the Catuai, the Typica is mild mannered, delicate, less acidic, smoother, but with similar tastes. Medium roasts bring a more traditional cup with better balance. This should be the minimum roast level if you do not want noticeable floral/fruit notes upfront. Still has a bit of jazz upfront but a more pronounced nutty/malty tone to balance it out. We thought it best right around a medium roast; balanced and sweet. Hints of sweet citric floral upfront comingle with smooth defined malt like tones, just the tiniest hint of a fruity factor in the aftertaste. Lighter roasts get much crisper, dominated with more floral citric fruit tones, lemony most would say but does still show a little malty undertone. Darker roasts cut out the more floral aspect of the cup and are very rich and smooth, more semi-sweet but still very malty, into second crack adds some complimenting smoky tones. A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level with a great balance between the lighter winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

Similar to the Sigri coffee these beans are pretty low acidity in the cup, very clean in its profile. Smooth, rich and chocolaty with some spice note accents. Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with no herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk.

Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.

A cool cup from medium to dark. There are some sweet island floral tones upfront at the lighter roasts, a sweet edge with unique spice; somewhere between a woody cinnamon to more peppery/clove. Wonderful aromatics accompany lighter roasts but could be a little too grassy/sharp for some. Medium roasts are more chocolaty, balancing with the spice nicely, less woody, more bold semi-sweet clove like spice. Best at a medium to dark roast: bigger bodied and darker toned. Lighter roasts will show some nice clean lemony floral acidity but do not fully develop the nice robust chocolaty factor, interestingly enough, one gets a bit of African herbal/spice in the cup at the lighter roasts. Medium roasts are where we thought it shined, just a small hint of citric sweetness upfront with a good balance of spicy chocolate notes, unique spice, more like the Indian coffees. Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.
