Best at a light to medium roast. This is a very showy, bright and fruit forward coffee that is just slightly milder than the natural processed. Light roast themselves have a crisp lemony brightness that quickly fades into sweet and winy fruit notes (somewhere between red fruit & blueberry), balancing with a little hint of the spiced chocolate darker tones seen across the board on the Yunnan coffees. A bit sharp but very sweet and fruity. Turns a bit oaky/boozy as the cup cools. Medium roasts build good body and mouthfeel, muting most of the citric tones but not the fruitiness, it cuts right through the more noticeable chocolate and spice tones. Darker roasts are not highly recommended, gets a bit roasty, sweet, with strong spice tones but leaves the cup a bit swampy tasting with the comingled fruit tones.

This is one exotic coffee even for natural fans. The linkage in taste to red wine (lighter roasting) or rum (darker roasting) is pretty wild. We have had “winy” coffees before, but not like this. Best served at the light to medium roast level, but quite interesting darker roasted as well. Lighter roasting accentuated the red wine like attributes, hints of citric with a very fruity edge: sweet, oaky, nutty, a little boozy in the finish. Although I know I was not drinking red wine, it really comes close to tricking the tongue. Medium roasts tame the cup a bit, still plenty winy and fruity but presents a smoother, less wilder version of the lighter roast points. Spice notes clearly pop out in the medium roast level starting to give some spiced rum like tastes in the background. Darker roasts really bring forth the sweet rum like spice notes balanced with a molasses like darker tone and a fuller body.

Beautiful prep on the beans & a good cup from light to dark. Our favorite was right in the middle, a nice medium roast won everyone over. A good daily drinker with an exotic spin. Lighter roasts will show some crisp lemony acidity, a sweet edge and will pull a little balance with an herbal/spice chocolate note. Medium roasts (our favorite) were smooth and rich, a bit fuller bodied, just a spec of that sweet citrus upfront, low acidity with predominantly chocolate/malt like tastes, a little spice pokes out in the aftertaste. Dark roasts cut out all the citric but will still taste sweet, a bit roasty, but it compliments the dark chocolate and spice in the cup nicely.Price:Price: $6.65$7.65/lb$6.65/lb -

Medium roasting really pulls together a tasty treat but you can take it lighter or darker depending on personal taste preference.
Hints of floral mixing with smooth nutty & malty features. Will show some winy citric and fruit acidity in the light to medium roast spectrum but all in all a medium to low acidity brew with a medium body.
Smooth, clean and sweet edged, a cup we are more than willing to drink all day. Guatemalans almost always hold dark roasts nicely for adding a little sweet malty note to the smoky and roasty tones is a tasty mix.

Much cleaner processing this season which is a perk, a point higher rated, but a little less fruity/wild of a cup. Hints of a red fruit at lighter roasts, especially as the cup cools. A bit fuller bodied and on the sweeter side, balanced with the bakers chocolate like earthiness (a good contrast) found in the other Haitian coffees. Lighter roasts will let the exotic profile shine but be a bit punchy with floral and citric tones, risks a grassy tones if you get too close to first crack. Medium roasts were our favorite, better balance with a pronounced chocolaty darker tone along with the more exotic floral and fruit. Darker roasts touching 2nd crack are far less fruity and hold more true to the Haitian profile, a little floral acidity still comes through the cup but strong and smoky with almost no hint of being a slow dry honey processed.

Awesome cup this season, good from light to dark. Darker roasts which are more traditional for Haitian coffee, come off robust and strong with a floral islandy sweet edge and a smoky aftertaste. Bigger bodied and on the chocolaty spicy side of things. Being so clean this cup is great at light to medium roasts as well; hints of lemony floral, crisp, sweet with a more nutty/caramel tone. A great medium to dark roast coffee. Robust and strong with an exotic more island premium sweet edge. Lighter roasts get a cool semi-floral sweet tone upfront balanced with a little grassy caramel and slight hint of herbal spice, tasty but does not bring forth those awesome stronger chocolate notes that Haitian coffee is known for. As one progresses towards the darker roasts it gets much fuller bodied and chocolaty (more bakers chocolate than milk) with just a little hint of floral acidity at the full city roast. A very clean, well balanced cup; crisp acidity and soft fruit tones comingle with a more chocolaty finish. Can be roasted from light to dark. The acidity is a bit citrus/floral upfront but will quickly fade into a rocking islandy fruit tone. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

A very clean traditional Sumatra cup. Best from medium to dark roasts. Fuller bodied with some nice exotic incense spice notes intermingled with a bakers chocolate and smoky cup profile. Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. A nice tasting coffee from light to dark. We thought it best right around a medium roast for daily drinking but depending on what you like, holds up well lighter or darker. Light roasts one can see the linkage to Kenya; citric and floral upfront, a sweet edge, thicker chocolate/spice undertones, hints of caramel with a little setup in the aftertaste. Not as punchy as most Kenyan offerings, but along the same line of tastes. Medium roasts really mellow the cup. Smooth most would say, a bit more neutral with just a hint of the floral and spice seen at the lighter roasts. Reminded us of a cross between the Mysore Nuggets and a nice Costa Rican coffee. Great for daily drinking. Darker roasts touching or into second crack retain the sweet edge and put a more malty/smoky taste into play with some lingering spice in the aftertaste.

Similar to the Sigri coffee these beans are pretty low acidity in the cup, very clean in its profile. Smooth, rich and chocolaty with some spice note accents. Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with no herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk.

Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.

A good hefty cup best from medium to dark roasts. Medium to full bodied with a bit of acidity behind it; buzzy citric/floral brightness balanced with a strong chocolate and spice darker tones. Similar to Rwanda/Burundi/Kenya but with a bit more body and stronger cup features. A clean well rated cup; lighter roasts accentuate the brighter more floral tones, a bit more showy of a cup but not as chuggable, can pull a little herbal balance. A nice medium roast was our favorite bringing excellent balance between the sweet floral and chocolate/spice. Best at the light to medium roast level. Good bit of citrus and red fruit upfront balanced with a thicker chocolate and spice note. Light roasts get very jazzy acidity, with just a hint of a dark tone. Floral and sweet edged, with an emphasis on the fruitiness of the cup. Medium roasting is much more balanced, medium to full bodied and far less sharp than the lighter roasts, but also less fruity. More of a chocolaty cup with fruity highlights. Dark roasts get even fuller bodied but burn out some sweetness, taste like semi-sweet chocolate on the roasty/smoky side, thick with a bit of spice in the aftertaste. A hint of fruitiness as the cup cools but hard to tell its natural processed roots at darker roasts.
