A clean, sweet, silky cup. In light roasts, expect a gentle floral and delicate fruit; moving into medium brings
out caramel, malt and nut with low acidity and a very clean finish. At darker roasts the body rises with
chocolate tones and a light smoky/roasty edge.

El Salto Premium Coffee is the Suárez family’s brand, whose ties to Boquete reach back to the early 20th century.
Their grandfather, Abdeliat Suadi — known locally as Domingo Suárez — planted tens of thousands of trees and passed the craft
to his children. Later, Vidal Suárez and Eira Gutiérrez de Suárez consolidated production around El Salto (Bajo Boquete)
and carried the tradition forward to their six children.
Today, Carlos and Laura Suárez continue the legacy through Vicala Trading Corp. and Vicala Export Inc., under the
El Salto Premium Coffee brand, which includes estates such as Camiseta (the source of this lot), Los Limones, and
Doña Eira Estate. At Camiseta they mainly cultivate Typica, Catuaí, Yellow Catuaí, and Geisha at 1,500+ masl.
This microlot is Geisha Washed — Purple Tip (Lot 3). Cherries are hand‑picked at peak ripeness, carefully depulped and
washed, then sun‑dried to a stable moisture. While Catuaí on parts of the farm often shows a citrusy brightness, this
washed Geisha emphasizes a notably clean profile with high sweetness and a moderate‑to‑low acidity for the variety.
Sensory: light roasts reveal floral and sweet nut; moving to medium, the nut shifts toward caramel and a more
pronounced malty base. In dark roasts, body increases and chocolate tones appear alongside a subtle smoky/roasty accent.
We recommend Light–Medium (leaning light) to maximize clarity and balance.

The Suarez Family’s Coffee Tradition in the region of Boquete began in 1900 with the arrival from Belen, middle east, of our grandfather Abdeliat Suadi, baptized by the locals with the name of Domingo Suarez. He married Antonia Serrano and together had six children who continued with the business that started by sowing 70 thousand plants of coffee. Years later his youngest son, our father, Vidal Suarez, man of great vision and hardworker, continued the business independently. Next to our mother Eira Gutierrez de Suarez, they started in 1948 a new generation of coffee growers in the area of Salto, Boquete. They pass on and inherited the love they had for the earth and the cultivation of coffee to their six children. Today, the companies diversify and two of these children: Carlos and Laura Suarez formed the companies Vicala Trading Corp. and Vicala Export Inc. under the brand “El Salto Premium Coffee”, dedicated to continue our family tradition, with its already international well known “Camiseta Estate”, and two new brands “Los Limones”, and “Doña Eira Estate” develop to give our customers the best cup quality and to make sure that every sip of coffee is a delight to the palate.
This washed coffee comes from Camiseta Estate, one of three farms owned by Laura E. Suárez, including Dona Eira Estate, Los Limones Estate. The varieties Typica, Catuai, Catuai Amarillo and Geisha are mainly grown here. The farms are located in El Salto, a municipality in Bajo Boquete, at altitude above 1,500 meters. The Catuaí variety is predominantly grown at Camiseta and the coffee has a particularly beautiful citric acidity.
Tasting Notes: A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level which made it very chuggable. Some crisp floral at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. Lighter roasts pull some nice balance sweet nutty and floral. As one pushes it into the medium roast range, the more nutty tones turn into hints of caramel and accentuate the malty cup profile. Dark roasts turn pretty strong but the nice sweeter malty cup profile mixes nicely with smoky and roasty notes.
Roasting Notes: An easy coffee to roast, very nice screen. Good from light to dark, pretty low chaff and pretty even roasting. Darkens up pretty quickly, will look a little darker than it is. We recommend trying it on the lighter side of a medium roast to get a nicely balanced cup.
