The Anacafe One Of A Kind competition highlights stellar coffees with unique taste profiles. Hundreds enter, 20 win, then hit an international auction. This is the #8 winning lot from a farm we have worked with before. This offering is a Borbon Arabica, natural processed, which is a very uncommon for Guatemalan coffees. Although widely recognized and grown throughout the world now a days, it is mostly found in African coffees. Rwanda/Burundi as a washed processed coffee.

Tasting Notes: A wonderfully clean and exotic cup. Best served light to medium, but tasty light to dark. Being natural processed, there is a hint of fruit, but it is mild comparatively to many. The Natural processing gives the cup a little fuller body and a lot of sweetness. The acidity is medium to low and comes off on the winy side, like a good Guatemalan should. The darker tones are pretty unique for a Guat. slightly malty but with some bolder spice notes popping out. A little bit of everything in this cup. We can see why it was rated so highly.
Roasting Notes: Crisp winy acidity for sure, but not sizzling. We found roasting it hotter and quicker, made the tones pop out a little more. A very clean natural, a little higher chaff but roasts nice and even. Well balanced and clean right at first crack; spice notes are a little herbal/veg like an African coffee. Getting just a slight pinch past first crack turns it into more of a spice/tea note.

I am not a coffee connoisseur, am a beginning home roaster. This was my first venture outside of lower priced coffee. I was not disappointed. I loved the fuller body, a hint of acidity but not too much, low bitterness. I roasted to a medium/medium light. It is very tasty. I would certainly buy it again. It is a real treat.
