Café Vida captures the classic profile of a Costa Rican coffee, with up-front sweetness, nutty and chocolaty undertones balanced with sparkling citric/floral acidity. An easy-drinking coffees that work well from light to dark!
Central Valley Cafe Vida offerings are different than those from Tarrazú and Brunca in that they are “Fully Washed,” meaning the cherries are depulped, fermented, and washed clean of mucilage. Typically in Costa Rica, Washed coffees are processed using a demucilaging machine, which mechanically removes the fruit material using friction instead of fermentation.
These coffees are depulped and placed in fermentation tanks for 12–24 hours, depending on the pH level of the coffee as it ferments, as well as the volume of coffee in the tank. After the fermentation period, the coffee is washed using water channels and passed through a centriflux machine, which removes the excess water and expedites the drying process. These coffees are dried mechanically.
Tasting Notes: Tasty from light to dark, a great jazzy everyday drinker. Medium bodied with medium to low acidity. This cup has great contrast between the sweet floral and nutty/chocolaty undertones. Lighter roasts are tasty but a little dryer, the floral factor pops right out with just a hint of a lemony acidity and a soft fruit tone. Nutty and chocolaty tones can be found especially as the cup cools. Medium roasts were our favorite roast point, pronounced and smooth darker tones with very floral aromatics and a sweet edge. Works great darker as well but will pick up stronger bittersweet tones.
Roasting Notes: Nice and easy to roast, we recommend getting some development past first to get a little more defined dark tone to the cup. Stick lighter if you like the floral, go a little darker if you like those rich nutty and chocolaty tones.
