Bright, sweet with a very diverse flavor set. Soft fruit, citrus, herbal, chocolate, malt and smoke are just a few of the main flavors one can see in this cup. Very dependent on roast – lighter roasting gives much more of the citrus, tropical like fruit with just a hint of a chocolaty factor. Darker roasts produce much more of a chocolaty factor with a bit of a strawberry fruit note and good sweetness, far less acidic and very enjoyable.

This coffee is put together by Grima Edema who has more than 20 years of experience exporting coffee from the Kercha district within the Guji zone in the Oromia region of Ethiopia. Coffee producers deliver their ripe cherries to Grima’s washing station where the cherries are sorted an immediately placed on raised beds and dried over a period of 15 to 20 days. The raised drying beds are carefully constructed to ensure proper air circulation and temperature control for an optimal drying process.

A wonderful high rated cup best served at the light to medium roast level. Very sweet, floral and delicate, this cup produces some awesome jasmine like aromatics that come through as hints in the taste. Only Ethiopians and real high end Geisha coffees achieve this; most will love it, a little tea like for sure but a wonderfully complex and exotic attribute. Light roasts are a bit higher acidity and more front loaded with floral and soft fruit tones, a little lemony and peachy with just a small pinch of a darker tone popping out. Medium roast very nicely balanced and bring an easier to drink all day cup, but slightly less exotic. A lovely cup of Ethiopian with an uncommon processing method. Lots of lemon/lime and floral upfront balanced with darker chocolate, herbal & spice notes, reminiscent of black tea.Although this cup has some more acidic features, medium to dark roasts get a bit more buzzy than citric. Even lower acidity fans will find joy at fuller roasts. We thought best from medium to dark, very clean high rated coffee so still a candidate lighter roasting, but pretty potent and sharp. A little slower roast will benefit this bean, building more robust and jazzy dark tones in the cup while muting some of the more acidic notes.
Light to medium roasts one will accentuate crisp more citric fruit tones. Darker accentuates the tea like spice and more chocolaty accents. Best for drip or pour-over methods, we found it a bit too sharp and sour for most single origin espresso heads, would work nicely in a blend though to add some sweat and floral tones.

A little milder example of an top notch Ethiopian; a good everyday drinker. Lighter roasts are not overly acidic. Smooth, clean and a little fuller bodied. The red fruit is clear in the cup but a little masked by the lemony floral acidity. Hints of the chocolaty undertone can be seen at light roasts but the cup finishes a little more herbal tea like in the aftertaste, not over the top and a good compliment to the floral and fruity tones. Medium roasts are smoother and lower acidity, not quite as fruity or acidic as the light roasts but more chocolaty with that wonderful soft fruit tone still clear in the cup and a little herbal spice in the aftertaste. Dark roasts get pretty bakers chocolate like, bittersweet with wonderful aromatics. Light roasts put off a sweet lemon acidity that fades into a nice red-fruit note, balanced with a tea-like dry chocolate undertone. A longer setup will help smooth it out and pronounce the fruit note. If shooting real light, make sure to flick out any beans not through first crack. Medium roasts are a bit more tame, no flicking required. Cup will get a richer chocolaty note with just a pinch of floral acidity and fading into a soft fruit note. Medium roasts are slightly reminiscent of the Yemen but perhaps still a bit brighter. Darker roasts are cool with these beans, as you touch 2nd crack you still have some nice medium roasted beans in the mix, a good balance of tones between the smoky chocolaty roasty and fruity citric tea notes.

This is not a super fruity natural, would be considered a darker toned, lower acidity, chocolaty cup. One can tell its natural processed roots with its sweetness and thickness and its Ethiopian roots with highlights of spice & fruity/floral notes throughout the roast range. Best served in the light to medium roast range for drip brew for it will show its best balance and promote a hint of fruity/floral. Turns into a chocolate bomb at the darker roasts, more on the dark chocolate side, which would work wonderfully for espresso or cold brew. Lighter roasts have a pinch of citric acidity and wonderful aromatics, hints of red fruit that balance with a bit of semi-nutty tea like spice.

The first thing one will notice is the aromatics. Smells like candied flowers with tropical fruit. Some of the aromatics come through in the taste but way milder. This cup has a bit less acidic edge that its Yirgacheffe cousins and a little fuller body. A sweeter upfront floral/fruit tone with just a little hint of acidity. Very smooth with a more chocolaty dark tone that balances the cup out nicely. What differentiates this guy from other Ethiopian coffees is a bit of a spice note mixing into the classic “floral/chocolate” cup profile.
