First new crop arrival and a gem of a cup! For those of you looking for a high scoring cup that holds those fancy lighter roasts, this is one not to miss. Works for the darker roast profiles as well but we will have some more value oriented lots coming soon that taste just as good dark roasted as this guy.
Tarime is in the northern part of Tanzania, between the Serengeti and Lake Victoria. This remote area of the country is relatively self-governed by the local social groups and tribes, and most of the farm-holders own between 2–8 hectares of land, growing coffee on about a quarter of their property (0.5–2 hectares). They also grow other cash crops as well as subsistence crops.
While coffees from this region were historically processed as naturals (and not making it to the states) due to the terrain and dry environment, Coffee Management Services noticed the potential for high-quality washed lots and installed a washing station at Muriba in 2013. The mill offers farmers the opportunity to deliver their coffee in cherry form, which can result in quicker payment as well as increased space on their land, as it reduces the need for drying surfaces as well. Coffees are received, sorted, and depulped, then fermented underwater for 12–15 hours before being washed and dried on raised beds for 7–15 days.
Tasting Notes:
Silky smooth, clean as can be with awesome depth of flavor. A bit higher acidity at the lighter roasts but comes off very balanced in the cup tones. Citric lemony brightness with a little hint of a tropical fruit note balancing with a complex chocolaty undertone with just the right amount of classic African spice.
Roasting Notes:
We like this coffee best at a medium roast. Great balance, not to extreme in any of its tones and a cup everyone will love. Lighter or darker will be good to experiment with but will depend on personal taste preference. Be in for a tasty treat. Try extending the roast at the light to medium roast points to build a little more body and undertones.
