This cup is nice and chocolaty, lower acidity and medium bodied. A little sweeter edge to it except for super dark roasts. Besides a chocolaty factor one will get some nutty/caramel/floral like tones at the medium roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.
Great cup from medium to dark. The cup profile is mostly down the malty/chocolate side but these beans will also have some nice floral aromatics and some soft fruit tones providing great depth of flavor. A wonderful rich, sweet, smooth and clean daily drinker. Guatemalans almost always hold dark roasts nicely for adding a little sweet malty note to the smoky and roasty tones is a tasty mix.

A very nice co-op production Tarrazu that follows the classic Costa terroir, floral acidity versus nutty and chocolaty tones. Best at medium to dark roasts, a lovely daily drinker. A good balance of flavors that can accommodate anyone’s personal tastes, dependent on roast level. Lighter roasts are brighter, sweeter and more floral, balanced with hints of dryer, nutty undertones. Medium roasts had the best balance, smooth with a slight chocolaty edge and pronounced nuttiness in the aftertaste, just a hint of crispness to the cup. Dark roasts turn fuller bodied and semi-sweet, accentuating the nutty and chocolate tones even more but will lose its floral and crisp sweeter edge.
Always one of our favorite Mexican coffees . A little fuller bodied than most lots, good sweetness and full of a floral nutty chocolaty tones. Lighter roasts add accentuate the crisp floral but risk some underdeveloped notes if way light. Medium to just before 2nd crack will produce smooth defined and balanced cups, the sweet spot as they say. Darker roasts get edgy and strong, smoky nutty and bakers chocolate tones which some will definitely like as well.

PLEASE PLEASE PLEASE re-order or get your hands on another batch of this fantastic coffee….. you cant beat the taste and the price just makes it that much better… Roasted it medium / dark and its smooth as butter, nutty, sweet, long finish.
