Great daily drinker from medium to dark roasts. Good body and lower acidity, nice and strong semi-sweet malty tones with a hint of herbaceous spice in the aftertaste. At the light to medium roasts it will show just a pinch of crispness and a hint of earth, not super citric but will leave a dryness to the tongue, a bit floral in its aromatics but not in the cup. Just before to touching 2nd crack gets rid of almost all signs of any acidity and adds some complimenting smoky and roasty tones to the cup profile. A very smooth cup from a medium roast to just before 2nd crack. Into 2nd crack will get some edgy strength that dark roast fans will like.

Description

A fresh FTO daily drinking arrival! Nicaraguan coffees are often my go to for daily drinking medium to dark roasts, rich and malty, semi-sweet with a bit of complexity in the darker tones. Works nicely black, but with a splash of milk, turns very chocolaty. A very nice base coffee. A larger co-op offering but with the FTO backing, a cup you can feel good about as well.

During the harvest, more than 2,300 small-scale coffee farming families in the Las Segovias Mountains (Estelí, Madriz, and Nueva Segovia) hand-select shade-grown Bourbon, Caturra, Catuai, and Typica cherries between 1,200 and 1,500 m ; each producer pulps and ferments the cherries at their own micro-mill, and the final sun-drying takes place at the Las Segovias mill of the PRODECOOP cooperative . This process guarantees traceability, SHG/EP classification, and Organic & Fair Trade USA certifications.

Founded in 1992, PRODECOOP now brings together 38 grassroots cooperatives. In addition to offering credit and technical assistance, it allocates Fair Trade premiums to health programs, student scholarships, and women’s empowerment through funds for members to acquire or renovate their farms.

Environmentally, the coffee is shade-grown , processed with recycled water, and the pulp is transformed into vermicompost, preserving soil and biodiversity. Organic certification prohibits synthetic pesticides, and solar panels reduce the energy footprint of drying.

Roasting Notes:
Good from a medium roast to as dark as you want to go. Light roasts just do not develop those lovely malty tones enough. Not being an overly sweet cup, we think a quicker roasts helps retain a bit more crispness and balance to the cup qualities.
