Half of the team that curates this coffee in Haiti lives right here in Madison, Wisconsin; they’re called Singing Rooster. Singing Rooster is a US-based nonprofit social enterprise that works directly with cooperatives and small-producer associations across Haiti. They open markets, pay above-fair-trade prices, and reinvest profits in agronomy, post-harvest infrastructure, and rural business development.
This lot comes from Baptiste (Central Plateau) and is sourced through UCOCAB (Union des Cooperativas Cafeteras de Baptiste), a grassroots cooperative union in the Baptiste commune. Recent reports describe UCOCAB as a network of approximately eight grassroots cooperatives representing approximately 2,000 small-producer families (numbers vary by year).
Within UCOCAB, CAB is a recognized group, known for its high altitudes and late harvests; CAB manages multiple washing stations and prioritizes quality control. The farms are located at an altitude of approximately 1,100 m (over 3,600 feet). The plant material in this supply chain is traditional Haitian Arabica, predominantly Typica and Bourbon, along with Caturra and Catimor in some plots.
Tasting Notes: Awesome cup this season, good from light to dark. Darker roasts which are more traditional for Haitian coffee, come off robust and strong with a floral islandy sweet edge and a smoky aftertaste. Bigger bodied and on the chocolaty spicy side of things. Being so clean this cup is great at light to medium roasts as well; hints of lemony floral, crisp, sweet with a more nutty/caramel tone. A little acidity but not enough to push folks away. A lovely daily drinking cup.
Roasting Notes: We recommend a solid medium roast to start. Fuller bodied and smooth with a sweet edge. Looking for a more delicate cup with sweeter hints of nutty/caramel/floral? Go a little lighter. Looking for a very strong semi-sweet chocolaty cup with a smoky edge? Make sure to touch 2nd crack with it. Great prep and a easy to roast coffee. Medium to low chaff

A stellar Haitian Blue. Rich dark chocolate, caramel, Dutch coco, spices, dried red raisins with hint of florals that provide lovely contrast to rich profile. Complex well developed flavors with deep body. Almost silk like smoothness. Versatile showing beautiful at both City++ and FC roasts, with even darker roasts retaining bean’s inate flavor complexity. A wonderful alternative to Jamaica Blue Mountain coffees – and in this case, better than many JBM due to well developed complex flavor profile.
Singing Rooster’s Baptiste Blue from Burman’s is one of the best Hatian Blue coffees available with this crop in particular standing out as one of the best in my experience.
