Hints of lemony floral at lighter roasts. Turns a bit more semi-sweet chocolaty around 2nd crack with some added smokiness. Smooth and rich, easy to drink all day long.

Description

A lovely fresh screen of Supremo, which is Colombia’s top export grade, basically means larger sized beans; contains screen size 17 and 18. This is versus an excelso grade coffee, which is screen 15/16.

The alpine tundra ecosystem around the volcano Tolima (Nevado del Tolima) is not only, as one would expect, rich in volcanic soils, it is a “neotropical high mountain biome,” known for dramatic fluctuations in temperature—which can range from below freezing to 90 degrees Fahrenheit in one 24 period—are described by locals as summer every day and winter every night. At lower altitudes where they are not so dramatic, these fluctuations are great for growing coffee.

Roasting Notes:
This bean is versatile when it comes to roasting, we thought best from a medium to dark roast but a tasty cup assuming it’s a little past first crack (city +). Super light can be a little grassy. Will roast even & has a medium to low chaff level. One may see a light bean or two stick out, judge the roast by the bulk of the beans. Setup will smooth out the cup, personal taste will dictate how long but we recommend trying to be 24-48 hours a ahead of when you want to drink it.

    This coffee came in the sample pack I got with my roaster. I was still learning and ended up getting them a bit darker than I intended, but these beans are deliciously fruity. Just leaving a comment in the hopes that they bring these back soon!
