Coming from family-owned farms organized around ASOPCAFA, a producer association with 84 members who live in the municipality of Aipe within the department of Huila, Colombia. On average, each producer cultivates coffee on 1.5 hectares of land and relies on the income from coffee production for a living. ASOPCAFA provides technical support to assist coffee farmers with certifications and the best agricultural practices for quality coffee production.
Tasting Notes: A nice clean cup of Colombian coffee! Lighter roasts show a little lemony acidity (would consider it low acidity) and presents some nice balance with a dry toasted walnut undertone with a little herbal spice. Medium roasts remove the lemony edge to the cup and turn the more herbal tones into a nice chocolaty factor with nutty accents. Dark roasts turn heavy bodied (thicker) and low acidity, strong dry walnut tones with hints of a chocolaty smokiness in the finish.
Roasting Notes: Medium to dark roasts presented the cup nicely, lighter roasts were a little too bright and we liked the chocolaty factor of fuller roasts better than the more herbal spice notes of the light roast. Medium roasts were our favorite for they were smooth and a little sweeter. Dark roasts work if you like a dryer stronger cup. Easy to roast, low to medium chaff.
