A nice clean cup of Colombian coffee! Best from medium to dark roasts. Lighter roasts show some nice characteristics but the coffee really blooms pushing the roast a bit. Light will have a little lemony floral acidity; would still consider it a low acidity bean, balanced with a semi-sweet dryer toasted walnut undertones, a little herbal spice in the after taste. Medium roasts remove the citric edge to the cup, turn it a little creamier, developing the herbal tones into chocolate like notes with nutty accents, a sweet edge. Dark roasts turn heavy bodied and more semi-sweet. Smoke, chocolate and nutty tones will dominate the cup. All in all, a classic Colombian coffee, on the cleaner side.

Description

This traceable community blend with a vibrant regional profile comes from an association called Grupo Asociativo El Bombo (ASOBOMBO), which has 230 members with small farms in the community of El Bombo, in the municipality of Pitalito. Each producer has their own micro-mill where they carefully harvest cherries, depulp, ferment, wash and gently dry the parchment on raised beds.  An export Company called Mastercol provides crucial logistical support for things like warehousing and milling coffee for export to the international market, which provides better income for everyone to reinvest in their farms and strengthen their families’ livelihoods.

Roasting Notes: Medium to dark roasts presented the cup nicely, lighter roasts were a little too herbal, we liked the chocolaty factor of fuller roasts better than the more herbal spice notes of the light roast. Medium roasts were our favorite for they were smooth and a little sweeter. Dark roasts work if you like a dryer stronger cup. Easy to roast, low to medium chaff.
