​​A lovely new Costa Rican arrival. Good from light to dark. Medium to low acidity, first notes to hit the tongue are some floral and soft fruit, not too sharp and on the sweeter side, pulls some balance with nutty and chocolaty undertones that gets stronger as you roast darker.

A traditional tasting Costa Rican with the classic floral versus chocolaty cup profile that most coffee fans will love, the addition of a little soft fruit tone at light/medium roasts is a nice semi-exotic twist.

Light roasts are a bit sharper showing some raw acidity in the cup, accentuates the floral/fruity. Medium roasts pulled the best balance and quite smooth and defined with a sweeter edge. Darker roasts get a bit hefty and semi-sweet, mostly chocolaty with just a hint of floral in aromatics and as the cup cools.

Here is something special from the southern half of Costa Rica where a group of 280 producers, each with just a few acres of land, have pulled their resources to form a cooperative called Cooperativa Agroindustrial y de Servicios Múltiples de San Antonio, Pérez Zeledón R.L. (COOPEASSA R.L.).

Pérez Zeledón is the nineteenth canton of the province of San José in Costa Rica, located in the Brunca region. The capital city of the canton is San Isidro de El General.

They cultivate an incredibly diverse range of organic produce including; bananas, pineapples, oranges, ginger, turmeric, rambutan and coffee. The coffee production comes from 75 producer-members who focus their attention on organic farm management throughout the year and then deliver their harvested cherries to the COOPEASSA mill where traceability and quality control are second to none. The wet-mill is designed to receive cherries from many small farms and consistently process this well balanced regional blend.

In addition to an impressive diversity of crop cultivation, COOPEASSA also has an equally intricate model of income diversification with a profitable agriculture supply store, supermarket and roasted coffee sold throughout the country. The cooperative also runs a medical clinic and pharmacy.

Roasting Notes: A shame to roast super dark, will mute up sweetness and all the lighter tones but still be tasty. Avoid cinnamon and super light roasts, will not be balanced and taste pretty front loaded with acidity and floral. It shines in the city to full city range. If you like a hint of acidity, a nice city or city+ roast (lighter side of medium) will be perfect, if you like lower acidity and a little fuller bodied, shoot for right before 2nd crack. (strong medium)
